
These apple cinnamon roll cookies SCREAM fall and I am here for it. We start with a soft cinnamon dough and add lots of cinnamon chips, white chocolate chips, and apple slices. Then we stuff each cookie with cream cheese frosting which really puts these cookies over the edge!
You can eat these cookies while they are warm, but I think they are even better when they are cold! Since these cookies have cream cheese frosting in them, they need to be kept in the fridge. You can either heat them up before eating, or you can eat them cold. Both are great, but like I mentioned, they are unreal when cold!

- 1 1/2 cups brown sugar
- 2 eggs
- 1 tsp vanilla
- 4 cups flour
- 2 tbsp cornstarch
- 1 tsp baking soda
- 1/2 tsp cinnamon

- 1 cup cinnamon chips
- 1/2 cup white chocolate chips
- 1/2 cup apple chunks
cream cheese frosting
- 4 oz cream cheese
- 1/4 cup butter
- 1 1/2 cups powdered sugar
- 1 tsp vanilla

One of the best parts of this cookie is that it’s filled with cream cheese frosting! It elevates these cookies and is really not a hard step. We’ll make the cream cheese frosting first. Then, scoop out the frosting with a cookie scoop onto a piece of parchment paper. Transfer them to the freezer while you make the dough.
Then, once the cookie dough is made. you’ll shove a frozen ball of cream cheese frosting in the center of each dough ball. The easiest way to do this is to scoop up the dough using a cookie scoop, then use your fingers to make a hole in the dough. Put the frosting in the hole and then close the cookie dough around it, then take it out of the cookie scoop! It is a few extra steps but is definitely worth it. But, if you don’t want to include it, you can skip it completely! You’ll just make normal cookies with no filling in the center.

If you have any leftover cookies, they need to be kept in the fridge! Since they are filled with cream cheese frosting, they need to be kept cold. But, if you don’t want to eat the cookies cold (even though I think they’re yummiest when cold), you can pop them in the microwave for a few seconds and they’ll be perfect!
As for what to store them in, any sealable container will work. A tupperware, a ziploc bag, anything like that! A plate with plastic wrap over the cookies — you just don’t want the cookies to dry out!

- 1 cup butter cold and cubed
- 1 1/2 cups brown sugar
- 2 eggs
- 1 tsp vanilla
- 4 cups flour 520 grams
- 2 tbsp cornstarch
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1 cup cinnamon chips
- 1/2 cup white chocolate chips
- 1/2 cup apple in thin chunks

- 4 oz cream cheese
- 1/4 cup butter
- 1 1/2 cups powdered sugar
- 1 tsp vanilla
instructions
- Begin by making the cream cheese filling. Add cream cheese and butter to a bowl and mix for 3-4 minutes (using hand or stand mixer). Add powdered sugar and vanilla and mix for 2 more minutes. The mixture should be smooth and creamy.
- Using a small cookie scoop (about 1 tbsp size) scoop the frosting out onto a piece of parchment paper. Once it is all scooped out, transfer it to the freezer to set up while you make the dough. If you want to add a drizzle on top of the cookies at the end, save a few tablespoons of frosting and set aside.
- Preheat the oven to 400 F. In the bowl of a stand mixer combine butter and brown sugar and mix until light and fluffy, about 3-4 minutes (you can also use a hand mixer).
- Add the eggs and vanilla and mix until just combined. Add the flour, cornstarch, baking soda, cinnamon, and salt and mix until just combined.
- Add cinnamon chips, white chocolate chips, and apple chunks and pulse until everything is evenly distributed in the dough.
- Remove the cream cheese frosting from the freezer. It should be quite firm at this point. Using a large cookie scoop (at least 1/4 cup), scoop out the dough then use your finger to create a hole/well in the dough ball. Place one frozen piece of cream cheese frosting in the hole and close the dough around it (so the frosting is in the center of the dough ball).
- Place up to 6 dough balls on a lined baking sheet. Bake for 9-11 minutes, until cookie is starting to brown on the outside.
- If you are adding a drizzle, add a splash of milk to the reserved cream cheese frosting and whisk. If it is still too thick, add a bit more milk. Once the cookies have cooled slightly, add drizzle the cream cheese frosting on top. Enjoy!
These are seriously the best cookies I’ve ever made. They’re SO soft and moist and the cream cheese filling is to die for. I doubled the recipe and didn’t have any problems! I also halved the sugar in the cream cheese filling/icing (by accident) and they were perfect in my opinion! So I will do that again next time I make them. I couldn’t find cinnamon chips at any grocery stores or bulk food stores near me, so I just added more ground cinnamon to the recipe, and also added chopped pecans as a substitute. They were to die for!!! Next time I would add a bit more apple pieces but overall absolutely 10/10. Thank you for this recipe!!!!!!!!
