I love starting the day off with a healthy breakfast. Eating something light and nutritious makes me feel ready for the day. Pancakes and cinnamon rolls are fun on occasion, but they definitely weigh me down. Most days for breakfast I love to sneak some vegetables in. If you know me well, or even just kind of know me, you’d know that I love vegetables. I love snacking on them as well as making them a large component of most of my meals! They are just too good and so versatile.
When I was serving as a missionary and had a limited budget, I would always buy a big bag of carrots at the beginning of each week and have a handful with every meal. I ate so many carrots that my skin started turning an orange tint, haha. It was really subtle so I didn’t realize it was happening until a woman we worked with a lot asked if I had gotten a spray tan. … lolz. I told her I definitely hadn’t, and remembered that my mom once told me her sister ate so many carrots that her skin started turning orange. I never thought that was a real thing until that moment. I started cutting back on carrots and when I got home my mom made me go on a carrot detox. She made me promise I wouldn’t eat any for months. Luckily it worked and my skin returned to its normal color, and I can now eat carrots again. So unless you want to look like you have a spray tan, don’t over consume carrots!
Thankfully for us all there are over 400 kinds of vegetables, according to wikipedia. WOW. Thats so many options. I really think that people that don’t like vegetables haven’t eaten them enough. So here is my encouragement to you to eat more vegetables, and I recommend you start with this breakfast bowl! Its packed with veggies, protein and healthy fats. Zoodles are a staple at my house, often finding their way into breakfast, lunch and dinner. To spice the zoodles up a little, I mash up avocado and add a little garlic salt to make “avocado pesto”, and mix that with the zoodles.
Fried eggs are always a good idea for breakfast, and pair well with zoodles. Beyond that, use whatever you have on hand. If you have mushrooms, saute some mushrooms. If you have an onion, saute an onion. If you have none of the above or are extra short on time, then don’t even worry about the additional veggie. Then to complete the bowl, I add a heaping pile of salsa. Salsa is a great way to get more veggies and adds so much flavor.
Start tomorrow right by eating this breakfast bowl!
Avocado Breakfast Bowl
INGREDIENTS:
- 1 cup zoodles
- 1/2 an avocado
- garlic salt, to taste
- 1/2 cup sliced mushrooms
- 1 egg
- 1/2 cup your favorite salsa
- cilantro
DIRECTIONS:
Saute the zoodles in a sauce pan until cooked, about 5 minutes. While they are cooking, mash up the avocado in a bowl and add the garlic salt. Once the zoodles are done, combine them with the mashed avocado and stir until evenly coated. Saute the mushrooms until done. Cook the egg until it is as done as you like. Add your favorite salsa and a few sprigs of cilantro.
