If you love banoffee pie you’ll be obsessed with these banoffee pie cookies. It starts with brown sugar and graham cracker cookies with toffee bits mixed in, topped with banana slices and fresh whipped cream. They have all the right banoffee pie flavors and will be show stopping at any event.
what is banoffee pie?
Banoffee pie is a classic British dessert made with bananas, toffee, and cream, typically layered over a buttery biscuit crust. The name literally comes from banana + toffee, and it’s the perfect combination of sweet, creamy, and crunchy.
These cookies take inspiration from banoffee pie by using graham crackers as the base, brown sugar for that caramelized depth, chunks of toffee in the cookies, and topping with bananas and whipped cream. Each cookie looks like a tiny pie and you’ll never need the real pie again.

how to make banoffee pie cookies
- Make the homemade toffee: Line a baking sheet with parchment paper. Heat a heavy-bottomed pot over medium heat. Add the granulated sugar, butter, water, and salt. Stir to combine.
- Continue to gently stir until the butter melts, about 3 minutes, then stop actively stirring. The mixture will start to bubble. Stir occasionally about once every 2 minutes or so, and let boil until it turns a medium brown color. Then carefully pour the mixture on the baking sheet and set aside to cool completely. Once cooled, use the back of a spoon to break up the toffee into smaller bits.
- Preheat your oven to 350°F and line two baking sheets with parchment paper.
- In a large bowl, combine the softened butter and brown sugar. Use a stand mixer or hand mixer to beat until fully combined and slightly fluffy, about 2 minutes. Add the egg and vanilla extract and mix until smooth.
- Add the flour, graham cracker crumbs, cornstarch, salt, and baking soda. Mix on low speed just until the dough comes together — don’t overmix here to keep the cookies soft.
- Use a large 1/4 cup cookie scoop to portion the dough. Place up to 6 dough balls per baking sheet, giving them plenty of room to spread. Bake for 9–12 minutes, until the edges are just set but the centers are still soft.
- Let the cookies cool on the baking sheet for 10 minutes before transferring them to a cooling rack. Allow them to cool completely before adding toppings.
- To finish, whip the heavy cream and sugar together until stiff peaks form. Top each cooled cookie with a few banana slices and a generous dollop of whipped cream. If you’d like, sprinkle with extra graham cracker crumbs for a little crunch.
substitutions for graham crackers
If you don’t have graham crackers on hand (or don’t like graham crackers), here are a few other options:
- Digestive biscuits – very traditional and closest to classic banoffee flavor!!
- Vanilla wafers – slightly sweeter, softer crumb
- Biscoff cookies – adds warm spice and caramel notes
Just pulse your substitute into fine crumbs and measure the same amount by volume.
how to store these cookies
The cookies themselves can be baked ahead and stored un-topped in an airtight container at room temperature for up to 2 days, or in the fridge for 4–5 days.
For longer storage, freeze the baked cookies (without toppings) for up to 2 months. Thaw at room temperature before serving.
Because of the fresh bananas and whipped cream, it’s best to add toppings right before serving. If you do have leftovers already topped, store them in the fridge and enjoy within 24 hours.

I never write reviews but these cookies were genuinely some of the best I’ve ever tasted. Just the cookie base was amazing but the toppings make it 10x better!!! The recipe itself was also not overly complicated. Will defiantly be making again.
omg i’m so glad!! the toppings definitely put these over the edge. glad you enjoyed!!
Made for Easter. These are so delicious! The whip cream wasn’t too sweet and the bananas lightened up the entire dish. The cookies themselves were insane! The toffee caramelized to give a perfect crunch. One of my new favorite recipes.
yay i’m so glad you loved these!! the not-too-sweet whipped cream really ties it all together. glad you enjoyed!
