
I will be eating this coconut french toast on repeat for a good long while. We’re using coconut milk instead of regular milk for our eggy mixture and adding lots of coconut flakes to give this french toast the best coconut flavor. This is part of my “perfect brunch” and is such a key dish!
ingredients needed for coconut french toast
- 2 eggs
- 1/2 cup coconut milk (or coconut cream)
- 1/4 cup unsweetened shredded coconut (sweetened is fine, too)
- 1 tsp vanilla extract
- 4-5 slices brioche bread (any kind of bread will work!)
- toppings of choice! (i used strawberries, whipped cream, and maple syrup)
how to make coconut french toast
- Crack both eggs into a shallow bowl. Add coconut milk, coconut flakes, and vanilla extract. Whisk until smooth.
- Quickly dip a slice of bread in the mixture on each side. If the coconut flakes don’t stick very well, use a fork to pick some coconut flakes out of the mixture and onto the bread.
- Transfer to a greased pan over medium heat.
- Cook on both sides until golden brown. Repeat with remaining bread.
- Top with your favorite toppings and enjoy!
