After eating nothing but cookies for the entire month of December, my body is craving whole foods, and this herby chicken meatball bowl is the perfect answer. It starts with kale, tossed with a yogurt jalapeño dressing, roasted sweet potatoes, parmesan roasted chickpeas, and herby chicken meatballs. If that doesn’t scream nourishing and delicious, I don’t know what does.
PLUS, I’ve gotten a lot of requests recently for recipes that also make great leftovers, and this bowl makes incredible leftovers. The sweet potatoes, chicken, and chickpeas reheat beautifully, and the kale can be tossed on the day of. This would also be a great option for meal-prepping. Double everything, and you’ll have enough for lunches for a week!
OH, and the yogurt jalapeño dressing? Addicting, vibrant, fresh, packed with herbs, you’ll want to put it on everything. I would seriously double the dressing just so you have extra in your fridge.
ingredients needed for herby chicken meatball bowls
chicken meatballs
- 1 lb ground chicken
- 1 cup ricotta cheese
- 1 egg
- 1/2 cup panko breadcrumbs
- 1 shallot, finely chopped
- 2 green onions, finely chopped
- 1/2 cup cilantro, finely chopped
- 1/4 cup dill, finely chopped
- Zest of a lemon
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
roasted sweet potatoes
- 1 large sweet potato
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp cumin
parmesan Chickpeas
- 1 can chickpeas
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp herbs de province (or Italian seasoning)
- 2 tbsp parmesan cheese
yogurt jalapeño dressing
- 1 cup greek yogurt
- 1 cup fresh basil
- 1/2 cup fresh dill
- juice of a lemon
- 1 tbsp olive oil
- 1 tbsp honey
- 1 jalapeño (seeds removed and washed)
- 2 cloves of garlic
- salt and pepper, to taste
other
- 4 cups kale
how to make herby chicken meatball bowls
- Preheat the oven to 400F.
- Make the chickpeas. Drain the chickpeas and pat them dry. Transfer them to a baking sheet. Add the olive oil, seasonings, and parmesan cheese. Toss until everything is coated. Transfer to the oven and bake for 15 minutes.
- Make the sweet potatoes. While the chickpeas are cooking, start on the sweet potatoes. Chop the sweet potatoes into bite-sized pieces. (If you are crunched for time, using pre-cut sweet potatoes is a great time-saving option!) Transfer to a baking sheet and add the olive oil and spices. Toss until everything is coated. Bake for 15-25 minutes, until the sweet potatoes are cooked through and starting to brown.
- Make the chicken meatballs. While the other elements are in the oven, add all the chicken meatball ingredients into a bowl except for the olive oil. Mix until well-combined. Take about 2 tbsp of the chicken mixture and shape them. I like forming them like thick little patties so they sear well, but you can also shape them into classic meatballs.
- Cook the chicken meatballs. In a large pan over medium-high heat, add 2 tbsp of olive oil. Cook the meatballs in the pan, flipping after about 3-4 minutes for each side. If you would rather cook the chicken meatballs in the oven, they can be cooked at 400F for about 15-25 minutes until their internal temperature is 165F.
- Make the dressing. Add all the dressing ingredients to a food processor. Blend until smooth.
- Assemble the bowls. Divide the kale, sweet potatoes, roasted chickpeas, and chicken meatballs between bowls. Top with the yogurt jalapeno dressing and enjoy!

Yes, you can absolutely substitute the ground chicken for ground turkey for a more protein-packed option.
To make herby chicken meatball bowls gluten-free, just substitute the panko crumbs for a gluten-free variation.
Making these bowls dairy-free requires a few more substitutions, and they are largely up to your preference. You could omit the cheese in the meatballs and chickpeas completely if you want. One commenter said they used silken tofu in place of the ricotta, and it turned out great for them! For the dressing, you can replace the Greek yogurt with a dairy-free option or use your favorite dairy-free dressing instead.
These bowls are great for meal prep or leftovers. Split the ingredients into individual airtight containers and enjoy for up to 4 days. If you want to freeze the meatballs, they stay great in an airtight container in the freezer for up to 3 months.

- 1 shallot finely chopped
- 2 green onions finely chopped
- 1/2 cup cilantro finely chopped

yogurt jalapeño dressing
- 1 cup greek yogurt
- 1 cup fresh basil
- 1/2 cup fresh dill
- juice of a lemon
- 1 tbsp olive oil
- 1 tbsp honey
- 1 jalapeño seeds removed and washed
- 2 cloves of garlic
- salt and pepper to taste
other
- 4 cups kale
instructions
- Preheat the oven to 400F. Begin by making the parmesan roasted chickpeas. Drain the chickpeas and pat them dry with paper towels. Transfer the beans to a baking sheet.
- Add the olive oil, salt, garlic powder, onion powder, herbs de province, and parmesan cheese. Toss until everything is well coated. Transfer to the oven and bake for 15 minutes.
- While the chickpeas roast, start on the sweet potatoes. Cut the sweet potato into bite-sized pieces. Transfer to a baking sheet and add the olive oil, salt, cinnamon, and cumin. Toss until everything is well coated. Transfer to the oven and bake for 15-20 minutes, until sweet potatoes are cooked through and starting to brown.
- While the sweet potatoes and chickpeas cook, make the chicken meatballs. Add all the ingredients (except the olive oil) to a bowl. Mix until well combined. Scoop out about 2 tbsp of the chicken mixture. Use your hands to form the chicken into a cylinder shape (you can also just roll them into balls, but I like having more surface area to brown).
- Add the olive oil (2 tbsp) to a large pan over medium-high heat. Add half of the meatballs and cook for 3-4 minutes on each side, until golden brown and until the internal temperature reaches 165 F. Repeat with the remaining chicken.
- While the chicken meatballs cook, make the dressing. Add all the ingredients (greek yogurt, fresh basil, fresh dill, juice of a lemon, olive oil, honey, jalapeño, garlic, salt, and pepper) to a food processor or blender. Blend until smooth.
- To assemble, divide the kale, sweet potatoes, roasted chickpeas, and chicken meatballs between bowls. Top with plenty of yogurt jalapeño dressing and enjoy!
Can I make this without cheese?
sure! you can just leave the ricotta out of the meatballs (they won’t be quite as juicy and tender, but they will still be fine!). then, just don’t add the parmesan to the chickpeas!
Delicious! Re the comment above about omitting the cheese – I have a dairy allergy in my household and made the meatballs with silken tofu – delicious and achieves the same result!
yay thank you for this tip!!
oh, and for the dressing you could use a dairy free yogurt or just use a different dressing completely (a store-bought DF dressing you like or something like that)!
This was seriously so good! The cinnamon on the sweet potatoes along with the herby jalapeño dressing was perfection.
YAY so so glad you enjoyed!! i feel like i could drink the dressing so i’m glad you feel the same haha.
I decided to make this for dinner tonight and omg it is so yum!! The jalapeño gives it the perfect kick and a punch of flavor. I added it to a bed of fresh arugula and it was delicious. I also tweaked it a bit with what I had available and chose to make the sweet potatoes savory. I also used extra lean turkey instead of chicken. Incredible- will definitely be making again!!
so glad you enjoyed this one!! turkey is a great sub for chicken. glad you’ll be making it again!
Could I use cottage cheese instead of ricotta?
i haven’t tested that but it should be fine!
I did it and they were great!
did you use the same amount of cottage cheese as ricotta?
I did cottage cheese instead too, I did 1/3 cup cottage cheese and 2/3 cup Greek yogurt (because that’s all I had) blended up and it turned out perfect.
ohh glad to hear they turned out great with the cottage cheese sub!
Made these tonight, so filling and flavorful!
yay so glad you loved this!!
Made this today and oh my god it was so tasty !!!
yay i’m so glad you enjoyed!!!
Can the meatballs be frozen so I can make them in bulk for lunches?
yes, totally! just keep them in an airtight container and they should stay good in the freezer for about 3 months!
Made this to meal prep my lunches this week and it is truly SO good!!!
YAY i’m so glad!!!
I’m obsessed! A friend made this recipe for a girl’s night and it was amazing! She made it with ground turkey and it turned out great. Also tastes great if you just eat it cold the next day.
YAY this makes me so happy!! so glad you enjoyed!
I knew this was gonna be good just reading the recipe but I am shocked at just HOW good. This is the best meal I’ve made in ages. Absolutely delicious!!
AH this makes me so happy!! so glad you enjoyed!!
We made this tonight and absolutely loved it! Cannot get over how perfect this recipe is 🙂
YAY so glad you loved it!!!
Can I use ground Turkey instead?
totally!!
I made this with ground turkey instead bc its what I had and it was so delicious! Very flavorful and my family liked it. Definitely will be making it again and again!
yay i’m so glad you and your fam enjoyed!!
Could I use TVP instead of ground turkey for the “meat”?
Everything about this recipe sounds fabulous! Just do not eat meat.
hi! i’m not sure — i’ve never used TVP as a meat replacement in meatballs. you could try it! you could also make a crispy tofu or something like that.
THIS RECIPE WAS SO GOOD,
however my assistants kept screwing things up:( and by assistants, I mean me. I was not ready for the amount of multitasking, counter space and chaos that happened.
Maybe its me? Maybe at the end of the day, I am not a real chef (I’m not). I both burnt my meatballs and ate my chickpeas and potatoes cold.
I digress, the flavors were amazing!! And maybe one day I’ll be able to truly make this meal, for real this time.
Thank you
hi!! i’m so sorry things slightly fell apart, but proud of you for pushing through and making it to the end 🙂 and so glad the flavors were working!!! glad you loved this one!
I read through and thought that was a lot of steps at once – so early in the day I made the dressing & made the meatball mixture. I put both in fridge until I was ready to make dinner. I also bought pre-cut sweet potatoes from my grocer – this would be the only way I’d make on a weeknight!!!
glad you were able to break up the process! hope you loved it!
Made this tonight and it turned out great!! The flavors were amazing! Do you have any tips on roasting the chickpeas? I followed the recipe, but mine turned out quite hard:/ Other than that, everything was super yummy! The sauce especially (I tried giving it 5 stars but it kept going back to 0. Best believe this is more than 5 stars!! Lol)
yay so glad you enjoyed!!! for the chickpeas, i’d recommend reducing the time. if they roast for too long they can become hard. so glad you loved this one!
Hi,
Do you know the calories and protein value of this recipe?
Thanks!
hi! i don’t know the calories / protein value. i’m sure you could copy/paste the recipe into various websites to find that info!
This recipe is my new go to meal prep for lunches/dinners! It is absolutely delicious! I was wondering if you know the calories and macros for a serving?
yay i’m so glad you love this one! i don’t know the calories / macros. i’m sure you could copy/paste the recipe into various websites to find that info!
Can I leave out the jalapeño from the dressing? Your girl can’t handle spice ?
yes you can totally leave it out! also, if you remove the seeds and wash off the jalapenos with water, it removes almost all of the spice, but still adds flavor! but you can also just leave it out if you prefer that!
Made this tonight and it was bomb! I came across your ig through this recipe and it looked so gorgeous, I had to try! So glad I did, definitely followed you, and looking forward to cooking more of your recipes. Thanks so much 🙂
YAY i’m so glad you enjoyed this one!!
delicious, healthy – so full of flavor and different from the norm
yay i’m so glad you enjoyed!!
Made this tonight— sooo good!! I am an experienced home cook who is always critical of blog recipes, and man did this one deliver! The dressing is ???. I used slightly different spices on the chickpeas and sweet potato (swapped cinnamon for garam masala and added smoked paprika). All in all, great recipe, filling and felt so good to eat clean delicious food!
YAY so glad you enjoyed this one!!!
I came across your recipe on IG, so happy I gave it a shot! It’s soooo delicious! Thank you for sharing. Looking forward to making this meal again soon!
YAY so glad you enjoyed this bowl!!
So so good! I was worried it was going to feel like a ton of steps but it honestly wasn’t bad at all. Made the dressing without the jalapeño because I forgot to grab one at the store and it was still delicious without it.
yay so glad you enjoyed!!! yes it looks like a lot of steps, but it goes by really quickly. and glad it was still good without the jalapeno!
Absolutely incredible recipe! this became a favorite in the house, we’ve made this two times already and are planning on making it so many more times. My partner hates sweet potatoes but loved them for this recipe. Thanks so much for this!!
AH this makes me so happy! so glad you enjoyed and glad we have a sweet potato convert, haha.
Can you cook the meatballs in the oven?
yes, totally! cook them at 400F for 15-25 minutes, depending on how big your meatballs are.
Made these tonight and my husband and I loved them! He even had seconds 🙂 The chicken patties are so tender and tasty and the dressing is so fresh tasting on the kale.
yay i’m so glad you loved this bowl!!
This recipe is amazing!! Dont underestimate the ricotta & herbs! Perfection. Thank you so much for sharing.
yay i’m so glad you enjoyed this recipe!! <3
This recipe was bomb! V flavorful and healthy! I doubled the recipe for meal prep and it took me about 2 hours to make. I was worried the kale by itself would taste intense but it was very mild, especially with the sauce on it. I also made the meatballs in the oven on 350 for about 20 mins or whenever it was at temp. If you were to flip it half way through it would add a bit of crispy-ness as well. I also used dill weed seasoning instead of actual dill because I forgot to pick it up at the store and it was still good! Overall I would make it again!
yay i’m so glad you loved this one! and glad the meatballs worked great in the oven!
What do we do with the kale please??
if the kale isn’t pre-chopped, just cut it into bite sized pieces. then just add it to the bottom of your bowls before serving!
Delicious! Did i miss a calorie count somewhere?
Thanks!
hi! i don’t provide a calorie count. you’re welcome to use an external site to calculate the calories!
Meal prepped this recipe for my lunches, and I’m obsessed. The meatballs are moist and the dressing is practically drinkable! Since I didn’t want to package my kale separately and I knew I would be heating this in the microwave, I dressed the kale in a little olive oil and salt and it came out great. Added avocado and some feta cheese and loved every bite!
YAY so glad you loved this one!! avocado and feta cheese both sound so yummm in this!
So good!!! My boyfriend and I agree that the sweet potatoes were nearly the star of the show here; that cinnamon and cumin combo is just sooooo good. I’ll probably swap out the kale for spinach next time just for texture preference. The flavors are crazy good, I can’t get over the meatballs! I definitely made flat discs/medallions instead of balls lol. Totally adding this into my meal rotation, thank you so much for sharing.
YAY so glad you loved this one!! i totally agree about the sweet potatoes. the cinnamon makes them soooo good.
This is so good! I’ve made it twice now. I don’t usually enjoy raw kale but the yogurt dressing makes it amazing. Thank you for writing your recipe steps so thoughtfully so cooks can multitask and use their time efficiently! This is totally doable for a week night dinner despite having so many components.
yay so glad you loved this!! and yes, it can feel overwhelming when you look at the ingredient list, but isn’t too bad once you get started!!
Intrigued by the fresh herb ingredients I was eager to try this. I’m not really someone that enjoys cooking but tired of same old boring meals. By the time I finished cooking this I wasn’t hungry anymore so saving it for dinner! Hoping I will love it! My tip for others like me (not cookers!) would be to make the dressing first; get that out of the way. Then I’d start the meatballs and get those going. Cuz by the time I got the meatballs and dressing done my potatoes and chick peas were not hot. And I think this is supposed to be served freshly warm. It took me a long time to make this recipe. Too long for me but I don’t have all the fancy processors either so if you have those it would probably be much quicker.
hi! i hope you enjoyed this once you tried it! <3
I made this with a vegetarian ground meat substitute and it was delicious! The whole family loved it, including a pretty picky eater. I doubled everything, and still had some sauce left over, which is great, because that stuff is MAGIC! Thank you for this fabulous recipe!
YAY so glad you enjoyed!! and so glad to hear that it worked with a vegetarian meat sub!!
Oh my goodness. Was craving these flavors and i was dazzled by this party of the palette. Never tried cinnamon on my sweet potatoes before. How amazing!! Seriously that dresssing is my new go-to. So simple and easy. I loved making this tonight!! Thanks so much <3333 i added my pickled onions on top
YAY so glad you loved this one!!! and the pickled onions on top is such a great addition!
this is really good! I’d recommend massaging the kale with a little salt and olive oil since its raw so it’s not quite as tough
so glad you enjoyed this one!!
Soooo yummy! Felt like my body was thanking me while eating it. It was a pretty time consuming dish and luckily I made it while my kids were napping. Haha
hi! so glad you loved this one!! yes it has a lot of elements, but i hope it was worth it!
So delicious, my family loved all the flavors and textures. A little daunting to make the first time, so many ingredients and components, but worth it. And the second time around should be easier. I was able to shortcut the meatballs and use a scoop to dollop out the mixture directly into the sauté pan, then flatten a bit with my cooking spatula. Great recipe!
hi!! so glad you loved this one! yes it is definitely a lot of steps, but i hope it was worth it!
Hi! What store bought dressings would you recommend for this dish? Thank you!!
hi! some kind of zest ranch would be amazing, or a honey mustard would be great!
Oh my goodness the meatballs were one of the best things I’ve made in a long time. They were so juicy & packed with flavor. I baked the meatballs 400° for 20 mins to make it a one pan sheet dinner. 10/10 recipe!
YAY so glad you enjoyed this one! and so smart to add it all on one pan to make it a little easier!
This was DELICIOUS! Made a couple of swaps based on what I had on hand and needed to use up (extra cilantro instead of basil, arugula instead of kale). Eating the leftovers tonight! I could eat handfuls of the chickpeas by themselves as a snack. They’re sooooo good.
YAY so so glad you loved this one! love the swaps you used and glad you made enough to have leftovers!
This might be the easiest and tastiest dish I’ve made in a long time! Everything came together so nicely. I didn’t have fresh dill sadly, I couldn’t find any at the store so I used a lemon dill salt mix and honestly it was fantastic! Garnished with lemon zest! 10/10
YAY so glad you loved this one!! and the lemon dill salt mix sounds like an amazing substitute!
Made this for dinner tonight and it was such a hit with my family! Everyone loved it! I will absolutely be making this again. Over and above that, it is a great high protein meal.
Thank you for the great recipe!
AH i’m so honored! so glad everyone loved it!
this was one of the most delicious and healthy things i’ve ever made / tasted 10/10!!
YAY i’m so glad!!!
Made this tonight and it came out great! The jalapeno yogurt dressing is so so good.
YAY so glad you enjoyed!! the dressing is my fav part!
made this a few times now and it’s so so good. meatballs are to die for!
yay so glad you love this one!!
I just made this tonight and it was absolutely delicious!! I saw the video reposted on Pinterest and had to dig to find the full thing. I’m so glad I did! I couldn’t find dill at my local store but besides that I followed the recipe mostly to a T. All the flavors worked so well together! Thank you for sharing 🙂
yay i’m so glad you enjoyed this one!!
I would like to meal prep this for my lunches, is it best to eat the meatballs and potatoes and chick peas warm or are they good cold?
whatever you prefer! i like them warm, but you can do whatever you want!
Can’t say enough good things about this recipe!!!! So flavorful, healthy, and satisfying. Also love how easy and great it is as leftovers. Already made twice and shared with friends!
YAY so glad you love this one!!
Absolutely love this dish – made it for meal prep this week. The sauce pulls it together!
yay so glad you loved this one! so perfect for meal prep and the dressing is my favorite part too!
I made these tonight, and I’m not kidding when I say it was my favourite thing I’ve ever made ! I only just found your blog, but you bet I will be making ALLL your recipes now, 10/10 !!
YAY this makes me so happy!!!! so glad you enjoyed this one and can’t wait for you to try more!
I am a student in university and I made these earlier this week for meal prep. This is my new absolute favourite meal! I AM OBSESSED. I would love to see more kale bowls with chicken/turkey meatballs!!
YAY so glad you love this one!!
I made this tonight for my meal prep this week and tried one bowl and it is delicious. All the flavors go well together. The recipe does have a lot of components but they are fairly easy to make. I will be definitely be making it again! I did not change anything about the recipe.
yay so glad you loved this one!! definitely has a few components, but worth it!
This recipe was a winner! My husband and I loved it! The flavors were delicious and the yogurt sauce really tied everything together. It was just as good for lunch the next day. As I don’t cook, my husband made this and he did say the prep took a while. But this will definitely be on the dinner rotation regularly.
glad you enjoyed!! definitely takes a bit of time to chop everything up, but glad you found it worth it!
WOW! I made this for meal prep lunches, and just finished my first one. It’s delicious and so filling! I swapped Greek yogurt for the cheese in the meatballs and swapped parsley for the dill bc I couldn’t find it, but everything tastes incredible. I used my homemade sourdough tortillas to make a wrap. Can’t wait to eat it again tomorrow ?
YAY so glad you are loving this one!!! and making it into a wrap is brilliant!
This was absolutely delicious!
so glad you enjoyed!!
my fam was in the same boat of being sick of eating sweets and heavy foods, so we made this for dinner tonight and everyone loved it! we forgot to get ricotta, so used blended cottage cheese instead. we also left out the kale, added roasted yellow squash, and served it with naan! i love how customizable the recipe is. this dish is definitely getting added to our regular rotation!
yay so glad everyone loved it!!! your subs sound delicious and honored it will be in the regular rotation!
Soooooooo delicious and flavorful!!! Ended up frying quickly the patties in the pan to give it some Colors but finished it in the oven. Cannot wait to eat the leftovers tomorrow!!!
yay!!!! so glad you enjoyed!
I took 2 bites and IMMEDIATELY had to put down my fork to leave a 5 star review. This recipe is incredible and irresistibly delicious.
wow i am so honored!! a mid-meal review!! so glad you enjoyed this one <3
My partner and I made this tonight, and it was absolutely delicious. We couldn’t stop commenting on how much we loved it! We didn’t make any substitutes. Perfect as is.
so so glad you both loved this one!! <3
Can you please tell me the nutrition information which I feel should be included with every recipe. Thank you!
Do you have nutritional values for this recipe?
Meh. Took a lot of time and steps, and I’m an experienced cook who looked forward to trying it. Just didn’t live up to what my tastebuds expected. Chickpeas did not crisp up, dressing was a bit bland, meatballs were unusually soft – presume due to the addition of so much greek yogurt. Too bad, as in theory it looked great.
hi! just want to note that the meatballs call for ricotta cheese, not greek yogurt! greek yogurt will absolutely not work in the meatballs and will make them fall apart. please use ricotta next time if you want these to turn out correctly! sorry you didn’t enjoy the rest of it as much as you hoped to.
My chicken meatballs are burning (and made them with two tablespoons worth) and still not 165. Help! What am I doing wrong? Did I make them too big? I’m def oven cooking the rest.
hi! if you are cooking them on the stove, turn down the heat! it is likely that your pan is far too hot and the meatballs are burning on the outside before they can finish cooking in the center. turning down the heat will fix the issue. alternatively, you can cook them in the oven!
I have been cooking since I was eight years old, and this recipe was one of the most creative and delicious that I’ve ever made! It was so flavorful AND healthy. My husband and 20-year-old twins loved it as well. My only suggestion would be to change the order of the recipe: make the sauce first, then the meatballs (perhaps refrigerate them for a half hour or so), then make the chickpeas and sweet potato. Regardless, this is a positively brilliant recipe!!
so so glad you enjoyed this one!! and so honored it’s one of the best you’ve made! <3
This recipe is AWESOME! I made it for a second time tonight and absolutely love the flavors.
Thank you so much for sharing this!
yay!!! so glad you love this one!!!
I loved this recipe — shoutout Pinterest for bringing me here! Super easy to make and now often integrated into my weeks for meal prepping. The second time I made it, I didn’t have the correct ingredients for the meatballs — though it ended up less herby, the taste was still phenomenal and I loved that I could vary the dish with my current ingredients. Highly recommend trying!
so glad you loved this one!!! and glad it was adaptable for what you had on hand!
This is one of my all time favorite recipes, and I’ve gone through A LOT. My kids even love it. I massage the kale with some salt to make it softer, but other than that it’s amazing. I make it for dinner parties, new moms, it’s amazing. THANK YOU!!
yay this makes me SO HAPPY. so glad you love this one!! (it’s also my favorite to take to new moms — perfect for lots of leftovers)
I can’t seem to find the nutritional facts on the recipe. Any idea what this equals out to?
This was amazing! My husband and I both loved it. Thank you for sharing. ??
This was incredible! Super flavorful and a fun, fresh way to get in those veggies. While nothing is particularly hard to make, it does feel like a lot of prep and cleanup. The yogurt sauce was absolutely delicious and the meatballs will definitely be going into my weekly rotation. Definitely worth the effort!!
so glad you love this one!! definitely a bit of prep but i agree that it’s worth it. and makes such good leftovers!
This was an incredible meal. It’s been on repeat for a while. The only thing I changed was arugula for the kale. I make the dressing first to let the flavors meld. I make the dressing for other salads/bowls because it is just that good! Thank you for putting this together!
so glad you love this one! arugula is a great swap for the kale. and yes, the dressing is my fav on everything!!
My hyperfixation meal as of lately! So delicious!!!
yay i’m so glad!!!
I have lots of dietary restrictions and am always on the hunt for a recipe to adapt that still sounds yummy. I left out the dairy ingredients (used coconut cream for the dressing) as well as the panko, egg, and honey (threw in a couple of orange wedges). This turned out amazing! Definitely making again soon! Five stars!
yay i’m so glad!!! those swaps are so smart. so glad you enjoyed!!
this was fireeee — made it last night for dinner and some lunches this week. didn’t have plain greek yogurt, but I did have honey flavored greek yogurt so I just used that and omitted the honey in the recipe LOL. also used up all my fresh dill in the meatballs, so I used dried dill in the sauce — still soooo good. that sauce was NO JOKE. yum. although if I knew I wouldn’t have enough, I would’ve used dried in the meatballs and fresh in the sauce!
last thing: I’m doubling, maybe even quadrupling up on them chickpeas and sweet potatoes next time I make this. can’t get ENOUGH. besides, it’s good stuff. it’s fiber. whatever! HAHA
thanks for sharing!!
YAY so so glad you loved this one!!!! here for quadrupling the chickpeas and sweet potatoes too!
if I were to bake the meatballs in an oven how long would a bake them for?
i’d bake them at 400 for 10-15 minutes! until the internal temp hits 165F.
Absolutely love this recipe: I make it as a meal prep for my husband and I. Doubling the recipe usually gives us both lunch for nearly a week (4 days). I call it “hot girl salad” because it seems so much like something an influencer would brag about having for lunch! I roast the sweet potatoes for a bit longer, but that’s just how I like them. I also tend to use spinach as the salad base instead of kale. The dressing is fabulous!
yay so so glad you love this one!! it absolutely is hot girl salad!
Have not tried recipe yet this no rating, Do you have information available for amount of macros for this recipe?
Thank you!
This was very good. And it felt good to know. I was eating healthy. It is a lot of steps which I did throughout the day instead of all at once I think next time I will do the sweet potatoes and the sauce the day before I baked mine in the oven for about 18 minutes and then put them in oil on top of the stove to kind of brown them. I did not have any dill so not sure it tasted the way it was supposed to, but it was still good!
yay so glad you loved this one! it definitely is a bit hands on, but great to spread out and always worth it in the end!
I make this almost every other week! Thank you. Sometimes I do store bought green goddess dressing and store bought crispy chickpeas 🙂 Thank you for this recipe. I love kale now!
yay i’m so glad you love this one!!! and yes sometimes the store bought shortcuts come in clutch!
This is so good, EVERYONE in my family loves it! It’s also become my go-to to give when a friend has a baby. It’s definitely labor intensive and I break up the prep over a couple days (dressing day before), but with planning and doubling the recipe for half me and half to give, it makes it all worth while. It’s not a weekly thing, but definitely a healthy, delicious treat.
so glad you (and everyone!!) enjoy this one!!! it definitely is a little more hands on, but reheats soo well. so glad this is a fav!
Just made this for supper and it was delicious! I didn’t have ricotta so I subbed for feta with a tablespoon of Greek yogurt and it was great. I also cooked the meatballs in the air fryer and it turned out well. Lots of steps but it was really yummy and nutritious
so glad you loved this one! it’s definitely labor intensive but so worth it! and glad the air fryer worked well for the meatballs!
