creamy mushroom potato bowl!

i am so sick of cold weather, but this bowl is really getting me through haha. it is warm and cozy but still has elements of spring! it’s the perfect in-between and i’m obsessed.

this bowl was inspired by a dish i had at @tattebakery that i couldn’t stop thinking about, so i had to make my own version so i can eat it any time i want!

ok be honest with me, have you ever reused your easter eggs?? when i was little we used to take our easter eggs out to the sand dunes and roll them down the dunes hahah. that was fun, but i like eating them even more! and this egg tartine is IT. the easter eggs (that have been hard boiled and safely kept in the fridge after decorating) are shelled and tossed in a lemon dijon mayo, then topped on toasted bread
with capers and LOTS of fresh herbs. it’s my ideal set up and i’ll be making it with all my easter eggs!

i have been on an egg kickkk lately so today we are discussing eggs ! eggs are so key to cookies — there are subs that can be made (apple sauce, flax egg, etc) and maybe that should be my next video?? but eggs add so much to a cookie. but too many eggs in a cookie and i gets spongy! no good! but no eggs? a dry, crumbly cookie with a hard bottom.

lemon poppyseed streusel muffins!!

i can’t think of a better way to welcome in spring than with these beauties. they’re soft, bright, and topped with streusel and a lemon glaze!! i’ll be eating them for breakfast and dessert for the next two weeks, thank you very much.

the muffins have lemon zest and juice, then the glaze has lots of juice too. they’re packed with lemon flavor, which is the way it should be!

ps i am so obsessed with my new kitchen mat. it’s from @houseofnoa_ and it’s their new emile print in latte! it’s so comfy and beautiful im in love.

if my pancakes aren’t light and fluffy, i don’t want them! so luckily i can eat these every day. the egg whites in these pancakes (which are KEY) are whipped with sugar to create a beautiful meringue that gives these pancakes their gorgeous height! then the egg yolks are mixed with milk and flour (+ a couple other things), showing that there really is no substitute for real eggs 🫶🏼

how to cook the perfect salmon!

I FORGOT to say it in the voiceover, but you want your oven temp to be 300F! sometimes i even do 275! this low and slow method makes it a lot harder to overcook and gives it a more even cook throughout your salmon! it’s my fav way to do it.

this seared snap pea salad is so simple but really elevates your salmon. we’ve got snap peas, seared until they’re just starting to char, pistachios (could be subbed with almonds!), feta cheese, fresh dill, and lemon juice. it’s fresh and bright and i want 5 servings!

i am a sucker for a soft cookie so i absolutely love using brown sugar! but like i mentioned in the video, most recipes (including a lot of mine) have a combination of white sugar and brown sugar to give you that crispy on the outside, crunchy on the inside combo.

braised lamb ragu!!

aka the coziest meal. this lamb ragu is warm and flavorful and so good. the ragu cooks low and slow in the oven for 3 hours so the lamb is insanely tender !!

if you don’t want to eat it all at once, you can keep the ragu in an airtight container and add it to pasta when you’re ready! it stores really well and will last a while.
