Transfer the batter to a loaf pan. For the streusel, add everything to a bowl and mix together. The mixture should stick together but easily crumble in your fingers.

- 1/2 cup olive oil
- 1 cup brown sugar
- 2 eggs
- 1 cup pumpkin puree
- 1/4 cup greek yogurt

- 2 tsp pumpkin pie spice

- Preheat the oven to 350 F. Begin by browning the butter for the streusel. Add the butter to a small pan over medium heat. Stir as the butter melts. Continue to stir until the butter begins to foam up and when it subsides you'll be left with brown, nutty smelling butter. Pour the butter into a bowl and let it cool in the fridge while you make the batter for the loaf.
- In a large bowl combine olive oil, brown sugar, eggs, pumpkin puree, greek yogurt, and vanilla extract. Whisk until smooth.
- Add flour, pumpkin pie spice, baking soda, baking powder, and salt. Stir until just combined.
- Prepare a loaf pan that is approximately 9"x5" by lining it with parchment paper. Pour the batter into the prepared loaf pan.
- Now make the streusel. Add the cooled brown butter to a small bowl. Add the flour, brown sugar, and pumpkin pie spice. Mix with your hands or a hand mixer until the mixture sticks together but crumbles when you try to break it up.
- Crumble the streusel on top of the batter in the loaf pan. Evenly cover the entire surface of the loaf. Transfer to the oven and bake for 45-50 minutes. The loaf is finished when an inserted toothpick comes out clean.
- Let the loaf cool while you make the glaze. To make the glaze combine the powdered sugar and maple syrup in a bowl and whisk until smooth. Drizzle on the entire loaf or just on a slice at a time. Enjoy!
