
These pumpkin pancakes with cinnamon butter are soft and fluffy and everything I want for fall. They’re easy to make and make the perfect breakfast or brunch! You’ll need an entire stack, maybe two?
These pancakes were inspired by Gilmore Girls! After sharing my Gilmore Girls coffee cake cookies I’ve gotten several requests to make more recipes inspired by the show! So these pancakes were born. In one episode, Luke tells Lorelai and Rory that he made something special that day — pumpkin pancakes with a dollop of cinnamon butter. So today we are recreating Luke’s special!

pumpkin pancakes
- 2 cups flour
- 1 tbsp baking powder
- 1/4 cup brown sugar
- 1 tbsp pumpkin pie spice
- pinch of salt
- 1 1/2 cups milk
- 1 tbsp white vinegar
- 1 cup pumpkin puree
- 1/4 cup butter, melted
- 2 eggs
- 1 tsp vanilla
cinnamon butter
- 1/2 cup salted butter at room temp
- 2 tbsp powdered sugar
- 2 tbsp honey
- 1 tsp cinnamon
the key to perfect pancakes
One of the worst things to consume is tough pancakes. UGH. No one wants a tough pancake. The perfect pancake is light and fluffy and tastes like a cloud! The biggest key here is to not over mix the batter. Mix the dry ingredients with the wet ingredients just until there are no large clumps of dry ingredients. If there are a few small clumps, that is okay! They will dissolve as the pancakes cook or as the batter sits. That’s it — that’s the key! You’ve got this!

pumpkin pancakes with cinnamon butter
ingredients
pumpkin pancakes
- 2 cups flour
- 1/4 cup brown sugar
- 1 tbsp baking powder
- 1 tbsp pumpkin pie spice
- pinch of salt
- 1 1/2 cups milk
- 1 tbsp white vinegar
- 1 cup pumpkin puree
- 1/4 cup butter melted
- 2 eggs
- 1 tsp vanilla

- 1/2 cup salted butter at room temp
- 2 tbsp powdered sugar
- 2 tbsp honey
- 1 tsp cinnamon
instructions
- Add the milk to a small bowl. Add the vinegar and stir to combine. Let it sit for 5 minutes.
- In a small bowl, combine the flour, brown sugar, baking powder, pumpkin pie spice, and salt.
- In a larger bowl, combine the milk and vinegar, pumpkin puree, butter, eggs, and vanilla. Whisk until smooth.
- Add the dry ingredients to the bowl of wet ingredients. Use a rubber spatula to combine everything together. Mix just until there are no large chunks of dry ingredients — be careful to not overmix!
- Add a bit of oil to a pan over medium heat. Add 1/3 cup of the batter to the pan. Cook for 2-3 minutes, then flip and cook for another 2-3 minutes. Repeat with the remaining batter.
- While the pancakes cook, make the cinnamon butter. Add the butter, powdered sugar, honey, and cinnamon to a bowl. Use a hand mixer or stand mixer to whip the butter for 3-4 minutes until totally combined and slightly fluffy.
- Add a scoop of butter on top of the pancakes. Add maple syrup or whatever you like! Enjoy!
I just made these for my family, and they were absolutely INCREDIBLE! I added a touch of maple syrup to the pancake batter, and I used maple syrup instead of honey for the cinnamon butter. Life changing!
