
I am LIVING for the colors in this rainbow nourish bowl! We are told we should eat all the colors of the rainbow, and this bowl is the perfect way to get them all in! Plus it is easy to make and tastes delicious.
Also this bowl gives me warm, spring vibes so I am using it to manifest warm weather! Yesterday it was 65 degrees where I live and I was so happy I wanted to cry! So we played pickleball and it made my heart happy.
What is in this rainbow nourish bowl?
- mixed greens
- roasted sweet potatoes
- avocado
- radishes
- cherry tomatoes
- brown rice
As you can see, this rainbow nourish bowl is vegan, but of course you can add any kind of meat to it. It would be great with some grilled chicken or salmon! But it is also great and filling on it’s own. Also, if you are a dressing person, add your favorite dressing to this bowl! I think it would be great with a Caesar or a chipotle ranch. But you do you!

rainbow nourish bowl
ingredients
- 4 cups mixed greens
- 1 large sweet potato
- 1 tbsp olive oil
- 1/2 tsp garlic salt
- 1/2 tsp paprika
- 1 avocado
- 1/2 cup radishes
- 1 cup cherry tomatoes
- 1 cup cooked brown rice
- 1 tbsp hemp hearts optional
instructions
- Preheat the oven to 425. Cut sweet potato into large wedges and toss with olive oil, garlic salt, and paprika. Cook for 20 min.
- While the sweet potato is cooking, prep the rest of the ingredients. Cut the cherry tomatoes in half. Thinly slice the radishes. Cut the avocado in half.
- When the sweet potato is finished cooking, assemble the bowl. Add the greens and top with the remaining ingredients. Sprinkle hemp hearts over the avocado. Top with your fav dressing and enjoy!
