
Say hello to my new favorite dinner, slow roasted citrus salmon! This salmon is roasted low and slow with plenty of olive oil with layers of citrus. Then it’s topped with an herby pistachio mixture that really ties everything together.
I am a big salmon fan. I am a “eat salmon at least once a week” type of gal. And now that I type that out I realize that probably isn’t a type of gal, hahah but it accurately describes me so we’re going to just stick with it. I started slow roasting my salmon earlier this year and I will never go back. Slow roasting salmon is the perfect way to get perfectly cooked, buttery salmon. Overcooked salmon is maybe the worst thing ever, but slow roasting your salmon makes it much harder to overcook! Win win!
how do you slow roast salmon?
To slow roast salmon we are going to cook our salmon at a low temperature for a long time. I think the ideal is to cook it at 275 F for about 15-25 minutes, depending on the thickness of your salmon! The best way to tell if salmon is done is to check it with a fork. Pull the salmon slightly apart in the center — if it still looks really undercooked, stick it back in the oven for a couple minutes. You want it to look slightly undercooked, because it will continue to cook after you pull it out of the oven! But, this all depends on how you prefer your salmon — cook it how you like!
Also, slow roasting the salmon with citrus is the perfect combination because as the salmon slowly cooks, the citrus has plenty of time for the juices to marinate and soak into the salmon!

- 1 lb salmon
- 1/4 cup olive oil
- 2 citrus fruits of choice (grapefruit, orange, or lemon)
- salt and pepper
- 1/2 cup fresh dill
herby pistachio mixture
- 1/2 cup fresh basil
- 1/4 cup fresh dill
- 1/4 cup pistachios
- 1 tsp garlic
- zest of one lemon
- 2 tbsp olive oil
how to make the herby pistachio mixture
The dill pistachio mixture is essential for this salmon, and it is so easy to make! Roughly chop the fresh basil, dill, and pistachios and transfer them to a bowl. We want it all to be chopped into small pieces, but don’t worry about making them uniform. Next add minced garlic and lemon zest to the bowl and stir well. Finally, add olive oil and stir until everything is all mixed together and it’s ready to go! It’s fresh, it’s herby, it’s perfect.

- 1 lb salmon
- 1/4 cup olive oil
- 2 citrus fruits (lemon, orange, or grapefruit)
- salt and pepper
- 1/4 cup fresh dill

- 1/2 cup fresh basil
- 1/4 cup fresh dill
- 1/4 cup pistachios
- 1 tsp garlic minced
- zest of one lemon
- 2 tbsp olive oil
instructions
- Preheat the oven to 275 F. Remove the salmon from it's packing and pat it dry with a paper towel. Pour half of the olive oil into the base of a baking dish that is big enough to fit the salmon.
- Slice your citrus of choice into 1/4 inch thick slices. Layer the citrus in the bottom of the pan. Place the salmon on top of the citrus. Top the salmon with the remaining olive oil, salt and pepper, and fresh dill. Top with an additional layer of citrus.
- Transfer the pan to the oven and cook for 15-25 minutes, until salmon is cooked to your desired doneness (I like removing the salmon from the oven while it is still just undercooked, as it will continue to cook when it is out of the oven).
- While the salmon is cooking, prepare the herby mixture. Roughly chop the fresh basil, dill, and pistachios and transfer to a bowl. Add garlic and lemon zest and stir to combine. Add olive oil and stir well.
- To serve the salmon, remove the citrus from the top. You can also remove the dill from the top of the salmon. Transfer the salmon to a plate and top with the herby pistachio mixture. Enjoy!
