
I am obsessed with these sweet potato wedges. This is my go-to recipe anytime I make sweet potato wedges, which is a lot!
One of my favorite restaurants in New York is a place called Dig Inn. They have several locations out there and have so many yummy, healthy options! One of my favorite things is their sweet potatoes. They’re thick and perfectly roasted. Earlier this year on Dig Inn’s instagram, out of the kindness of their hearts, they shared their sweet potato recipe!
I’ve made them many times and they are so so good. One key for this recipe is to have really big chunks of sweet potato. I cut each sweet potato in half, then cut each half into fourths. so they are hefty pieces! But that is what makes them so good.
Since these sweet potato wedges are so large, they need to cook for 30-40 minutes to be done all throughout. BUT they get the crispiest edges that are so yummy! You’ll be serving these for every meal.

sweet potato wedges
ingredients
- 4 medium sweet potatoes
- 1/2 cup olive oil
- 1 tsp paprika
- 1/2 tsp salt
- ground pepper
instructions
- Preheat the oven to 425. Cut the sweet potatoes into large chunks. Mix the olive oil, paprika, salt, and pepper until well combined.
- Toss the sweet potatoes with the marinade, then pour them onto a baking sheet lined with tinfoil. Cook for about 30-40 minutes, until the sweet potatoes can be easily forked and the outsides are brown and crispy. Enjoy!
