It is perfect for fall and really simple to throw together.

If you need a 10 minute dinner, you can make this salad insanely quickly by doing a couple hacks. Instead of cooking wild rice from scratch, use a bag of precooked rice! Trader Joe’s has a frozen rice medley that is kind of similar to wild rice and is delicious. Plus it cooks in three minutes so it is quick!
The other hack is to use precooked rotisserie chicken. Pick one up from any grocery store and it will work perfectly in this salad. With the quick cook rice and pre-cooked chicken, you can seriously throw this salad together in 10 minutes, and it will taste amazing!

If you dig deep into Sweetgreen’s nutritional facts page you can learn a lot. It details what ingredients are in each separate thing. So, I think my recipe is about as spot on as you can get! You can take a few short cuts like I described above, but if you want all the flavors spot on, here is what I learned.
For both their roasted chicken and roasted sweet potatoes, Sweetgreen only uses oil and umami seasoning. That’s it! So if you want this bowl to taste just like Sweetgreen’s, season your chicken and sweet potatoes with oil and umami seasoning. If you don’t have umami seasoning, my favorite kind is from Trader Joe’s. It is in their spice section and has a great flavor (and is so affordable!).
Also, Sweetgreen tosses their salads, so if you want it identical, throw everything in a bowl and toss it all together! This is obviously optional, but definitely adds to the Sweetgreen feel.

Sweetgreen harvest bowl
ingredients
- 4 cups kale
- 1 cup cooked wild rice or brown rice
- 1 lb roasted chicken
- 1 sweet potato about 1 cup sliced
- 1 tbsp olive oil
- 2 tsp umami seasoning optional
- salt and pepper, to taste
- 1 red apple
- 1/4 cup goat cheese
- 1/4 cup crushed almonds
balsamic vinaigrette
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 1 tsp dijon mustard
- 1 tsp honey
- salt and pepper, to taste
instructions
- Preheat the oven to 425 F. Slice the sweet potato in fourths, then into slices, about 1/4" thick. Transfer the sweet potato to a baking sheet and toss with olive oil, umami seasoning (optional), salt, and pepper. Cook for 15 minutes, until they're starting to brown.
- While the sweet potato cooks, prepare everything else. Cut the apple into 1/2" cubes.
- To make the dressing, add the olive oil, balsamic vinegar, dijon mustard, honey, salt, and pepper to a jar. Shake until fully blended (or use a milk frother to quickly emulsify!).
- Pour the dressing over the kale and toss until the kale is fully coated. Divide the kale into two bowls and top with cooked wild rice, roasted chicken, roasted sweet potato, apple, crushed almonds, and goat cheese. If you want it to be just like Sweetgreen, toss the salad until everything is well mixed. Enjoy!
