This recipe is honestly such a breeze and is ready so fast. Plus it is flavorful and so colorful! The turmeric makes the chicken a beautiful bright yellow. Then, the cilantro, tomatoes, and pickled red onions give us the rest of our color!
Pickled red onions are a staple in my fridge. They are so easy to make and are the perfect addition to so many things — toast, eggs, bowls, sandwiches, etc. You can find my recipe for pickled red onions here.

20 minute turmeric chicken bowl
ingredients
turmeric chicken
- 1 lb chicken tenders or breasts
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp turmeric
- 1/2 tsp paprika
- salt & pepper
dill cucumbers
- 1 cup cucumbers chopped
- 3/4 cup plain greek yogurt
- 1 tsp garlic
- 1 tsp dried dill
- 1 tsp lemon juice
- salt & pepper
everything else
- 3 cups mixed greens
- 1 cup cooked rice
- 1 cup tomatoes chopped
- 1/4 cup pickled red onions
- 1/4 cup parmesan cheese
- cilantro
instructions
- Preheat oven to 400. Toss the chicken with the olive oil, lemon juice, and spices. Bake for 15 minutes, or until temp of chicken reaches 165.
- Combine chopped cucumbers, greek yogurt, garlic, dill, lemon juice, salt, and pepper in a bowl.
- To assemble the bowl, add greens, then top with rice, tomatoes, cucumber mixture, chicken, pickled red onions, cheese, and cilantro. Enjoy!
