These cookies are the healthiest, easiest breakfast cookies! Made with only three ingredients they are so simple, but so yummy.
The first two ingredients of these cookies are bananas and oats. The third ingredient (or fourth or fifth ingredients) can be decided by you! Today I’m sharing my three favorite combinations — coconut, chocolate chips, peanut butter.
Any type of oats can be used for these cookies. I’ve tried old fashion and quick oats and they both taste great.
These cookies can be baked ahead of time, kept in the freezer, then warmed up in the morning for a quick, healthy breakfast! They are definitely best warm, so if you freeze them please get them nice and warm in the microwave before you eat them!


3 INGREDIENT BANANA COOKIES, 3 WAYS

Coconut
- 4 bananas
- 2 1/2 cups oats
- 1 cup coconut
Coconut Chocolate Chip
- 4 bananas
- 2 1/2 cups oats
- 1 cup coconut
- 3/4 cup semi-sweet chocolate chips
Peanut Butter
- 4 bananas
- 3 cups oats
- 3/4 cup peanut butter
instructions
For all three versions:
- Preheat oven to 350 and line a baking sheet with parchment paper.
- Mash bananas in a medium sized bowl.
- Stir in oats and mix until combined.
- Add the mix-ins of your choice and mix until combined.
- Using a 1 inch cookie scoop, drop dough onto your prepared baking sheets. Use your fingers to gently shape the cookies, flattening them slightly.
- Bake for 12 minutes. Let cool for 5 minutes before removing from the pan. Enjoy!
