Next time you look in your fridge and all you have is green beans and if you happen to have a tub of massaman curry paste that your angel mom sent you, then make these green beans. Or if you don’t have green beans and curry paste on hand, then go out and get some. Right now. RIGHT NOW. Okay, take your time, but make them eventually.
avocado pesto breakfast bowl
I love starting the day off with a healthy breakfast. Eating something light and nutritious makes me feel ready for the day. Pancakes and cinnamon rolls are fun on occasion, but they definitely weigh me down. Most days for breakfast…
mediterranean eggs benedict
I like eggs benedict, but I don’t love eating two huge biscuits for breakfast. So here’s a perfect substitute: sweet potatoes. These sweet potatoes are cut into thin slices and baked, then topped with a delicious mediterranean salad, along with two poached eggs.
eggplant pizza
I know its winter right now, but I am having summer withdrawals, thus today’s eggplant pizza. It is made with eggplant, mozzarella, and garden fresh tomatoes and it is oh so good.
muhammara
Muhammara is delicious. If you’ve never had it before, its a roasted red pepper and walnut spread that is eaten in the Middle East. Its tangy, nutty flavor is hard to beat. It goes well with anything you would eat hummus on – vegetables, crackers, bread, etc.
thai grapefruit salad
This week I was looking back through some of my family’s old favorite recipes and came across this Thai Grapefruit Salad. I stopped everything I was doing and straight to the grocery store and made it that night. Its that good. This used to be a recipe we made all the time, but for some reason we haven’t had it in AGES. But, no worries, this recipe has been revived and will be made often, once again.
beet hummus
Bears…..beets……battlestar galactica.
Okay mostly just beets here, but I still love the office.
falafel waffles
SWEET MERCY GUYS. FALAFEL WAFFLES.
Falafel waffles with tzatziki slaw. Can life get any better? No. The answer is no.
I have always been a huge fan of all things mediterranean. I love me some gyro, hummus, baba ghanoush, falafel, etc. I’m a sucker for it all!
Falafel is typically fried in a small ball, but that has always been my hold up with falafel. I’m not a huge fan of fried food. Fried food tastes good, sometimes, but afterwards you feel like you’re going to die. Okay that may be a bit of an exaggeration, but you certainly don’t feel good. So here is the perfect solution! Falafel batter, cooked in a waffle iron. No deep frying needed!
bibimbap
Growing up my family ate a lot of different types of food from all over the world. We were constantly trying new restaurants and even making it at home. We always loved Korean food and there were a few good…
chicken meatballs with dill yogurt sauce
Guys. I’m excited about this recipe! It is delicious and super easy. I am a sucker for dill. I love dill. It tastes so bright to me and can easily bring out good flavors. The dill I used in this…
stuffed salmon
For at least the last 10 years of my life whenever people have asked me what my favorite meal is I always say stuffed salmon. If that doesn’t tell you something about this recipe I don’t know what will. Fish…
summer salad
I absolutely love summer. There’s nothing like it. The juicy watermelon, the perfect summer nights around the fire pit, riding in the jeep with no doors, the absolutely overgrown weeds that cause me ridiculous allergies…oh yeah, cannot forget about that…
