
We had an eggplant plant in our backyard last summer and I really miss it, so I went and bought one and made this baba ganoush!
Homemade hummus is way more common than baba ganoush, but I think it’s because people don’t know how EASY it is to make this! All you do is roast an eggplant, then throw everything into a food processor or blender. Easy.
what do you need to make baba ganoush?
- eggplant
- tahini
- lemon juice
- garlic
- salt
- olive oil
- paprika
- za’atar
- black pepper
The tahini is a must in this recipe. It can be found in almost every grocery store nowadays and adds so much flavor to this dip. As for the paprika and za’atar, both are toppings of the baba ganoush, so if you don’t have either / can’t find them, you can just leave them off!

ingredients
- 1 large eggplant
- 1 tbsp tahini
- 1 tbsp lemon juice
- 1 tsp garlic
- pinch of salt
- 2 tbsp olive oil
- paprika
- za'atar
- black pepper
instructions
- Preheat the oven to 425. Poke a few holes in the eggplant and roast it in the oven for 20 min. Let it cool then peel the skin off.
- Add the eggplant to a food processor / blender along with the tahini, lemon juice, garlic, and salt. Blend until smooth then add olive oil and blend again.
- Transfer to a plate or bowl and top with extra olive oil, paprika, za’atar, and black pepper. Enjoy!
