
For day 9 of my 12 Days of Christmas Recipes we are making brie and pear bites! These are an easy appetizer that will be perfect for any holiday party. We take puff pastry, baked in small squares, then top it with melty brie cheese, pear, and hot honey.
I feel like appetizers are often overlooked, but my goodness they are important. Having a small bite before dinner really just brings up everyone’s mood and improves dinner tenfold! So don’t skip the appetizers. These bites are perfect — they’re small, easy to make, easy to share.

- 1 sheet puff pastry (about 10×10″)
- 1 egg
- 4 oz brie cheese
- 1 pear (i love bosc)
- 2 tbsp hot honey
- flaky salt
- fresh rosemary (optional)
how to make brie and pear bites
These could not be easier to make. Preheat the oven to 350 F. Open a sheet of (thawed) puff pastry. Crack an egg into a small bowl and whisk. Using a small pastry brush, brush a thin layer of egg onto the puff pastry. Using a pizza cutter (or sharp knife), cut the puff pastry into about 40 squares, about 1 inch wide.
Stack two puff pastry squares on a lined baking sheet. Repeat with the remaining squares until all the squares are used, you should have about 20. Transfer to the oven and bake for 10 minutes. While they are baking, prepare the brie and pears. Slice the brie into thin slices that are about 1 inch wide. Slice the pear into similar sized slices.
Remove the puff pastry from the oven, it should be puffed up and golden brown. Top each puff pastry stack with a slice of brie and a slice of pear. Return to the oven and bake for 1-2 minutes more, until the cheese is melted. Remove from the oven and top with a drizzle of hot honey and a sprig of rosemary. Then enjoy them while they’re hot!
