Last year we took an incredible trip to Japan and one of the best things we ate was a bowl of carbonara udon. Fresh, hot udon noodles were were topped with thinly shaved beef, an egg yolk, green onions, and lots of black pepper. You then stir everything together to make a smooth, creamy sauce. It was an unforgettable meal and I have been meaning to recreate it ever since!
It will definitely never compare to the freshly made udon noodles in Japan, but I think my recreation is pretty spot on. I decided to use bacon instead of thinly shaved beef, because bacon is easier to find and I love the salty punch that bacon gives. Then just like a classic carbonara, the hot noodles cook the egg yolk to make a beautiful, silky sauce.
