
This cinnamon apple chia seed pudding is my new favorite breakfast! It tastes like dessert, but it’s healthy! A win, win. Plus it is vegan + gluten free!
Chia seed pudding is crazy easy to make — mix it all together and throw it in the fridge overnight. The next morning the chia seeds will be expanded and you’ll have a thick, delicious pudding! And what is better than to top it with some cinnamon apples to get all the fall feels?
The cinnamon apple topping is a few extra steps, but so worth it. Take a chopped apple and add to a pan with some coconut oil. Add some cinnamon, maple syrup, and salt, and cook until the apples are soft! Then you’ll have a warm, flavorful topping on your cold chia seed pudding. Also! I like to add some warm peanut butter or almond butter on top of the apples. It just ties everything together!

ingredients
cinnamon chia seed pudding
- 1 cup milk i use almond
- 1/4 cup chia seeds
- 1 tbsp maple syrup
- 1 tsp vanilla
- 1/2 tsp cinnamon
cinnamon apples
- 1 apple
- 1 tbsp coconut oil or butter
- 1 tbsp maple syrup
- 1/2 tsp cinnamon
- pinch of salt
instructions
- Make the cinnamon chia seed pudding the night before serving: Mix the milk, chia seeds, maple syrup, vanilla, and cinnamon in a bowl. Cover and put the bowl in the fridge overnight!
- The next morning, chop the apple into small pieces. warm the coconut oil in a small pan. add the apples, cinnamon, maple syrup, salt, and stir until the apples are well coated.
- Sauté the apples on low heat for 6-9 minutes until they are soft and fragrant.
- Transfer the chia seed pudding too bowls and top with warm apples. Top with warm peanut butter or almond butter or whatever you like. Enjoy!
