
Friends, this cinnamon roll stuffed french toast is so good I want to cry! Each piece is stuffed with mascarpone cheese, brown sugar, and cinnamon so each bite has a creamy cinnamon roll flavor. Then it is all topped off with fresh berries, whipped cream, and syrup!

Brioche bread is thick sliced bread that is soft, but firm enough to hold its shape. It is also easy to stuff! The easiest way to stuff this bread is to slice along the bottom edge of the bread, slicing most of the way through, but not all the way through. Then you have the perfect pocket to fill with the creamy cinnamon roll mixture! I got my beautiful brioche bread from Sprouts! Sprouts is my go to for so many things, fresh bread included. I also got all the berries from Sprouts because their produce is always so fresh.
The stuffing includes mascarpone cheese. If you can’t find mascarpone, you can use cream cheese instead. I think mascarpone tastes better in this dish, but either will work.

ingredients
- 1 loaf brioche bread
- 8 oz mascarpone cheese
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1 cup milk
- 2 eggs
- 1 tsp cinnamon
- strawberries
- blueberries
instructions
- Using a sharp serrated knife, carefully cut a pocket in each slice of bread. The pocket should be on the bottom edge of each slice and should go up about 2 inches.
- In a bowl combine the mascarpone, brown sugar, and cinnamon. Mix until smooth. Scoop a small amount of the mixture into the pocket of each slice of bread. Gently press the seam together so it is mostly sealed.
- In a shallow dish, combine the milk, eggs, and cinnamon. Whisk until combined. Briefly dip each piece of stuffed bread into the egg mixture on both sides.
- Transfer to a greased pan over medium heat. Cook for about a minute on both sides until golden brown. Top with fresh berries and whipped cream, and whatever other toppings you like! Enjoy!
