
This cookie!!!!! I have been so excited to share this recipe and it is finally here. These are my date, cheddar, and dark chocolate cookies. And I know what you’re thinking — cheddar cheese in a cookie? TRUST ME. It adds a slightly salty bite that is perfectly balanced out by the sweet date and the bitter chocolate. It is basically the trifecta all wrapped up in one cookie and it is perfect.
If adding cheddar cheese to a cookie is just beyond you, I get it. But the cheese does not give the cookie a cheesy flavor. Instead it gives a slightly salty bite! It’s kind of like adding miso to a cookie, but not as strong of an umami flavor.

- 1/2 cup butter softened (salted or unsalted)
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 egg
- 1 tsp vanilla extract
- 3/4 cup all-purpose flour 95 grams
- 1/2 cup whole wheat flour 65 grams
- 3/4 cup rolled oats
- 1 tbsp cornstarch
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup dates pitted and chopped
- 1/2 cup cheddar cheese freshly shredded
- 1/2 cup dark chocolate chunks optional

ingredients
- 1/2 cup butter softened (salted or unsalted)
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 egg
- 1 tsp vanilla extract

- 1 tbsp cornstarch
- 1 tsp baking soda

instructions
- Preheat the oven to 350F. Add butter, brown sugar, and white sugar to a bowl. Use a stand mixer or hand mixer to mix the butter and sugars for 4-5 minutes, until the mixture is lighter in color and fluffier.
- Add the egg and vanilla and mix until combined.
- Add the all-purpose flour, whole wheat flour, rolled oats, cornstarch, baking soda, and salt. Mix until just combined.
- Chop the dates into small pieces, making sure they don't all stick together. Add the dates, cheddar cheese, and dark chocolate chunks. Mix until just combined.
- Using a large cookie scoop (around 1/4 cup), scoop the cookie dough into balls and transfer up to 6 on a lined cookie sheet. Place a couple extra pieces of dark chocolate on top of each dough ball.
- Transfer to the oven and bake for 11-13 minutes. Remove from the oven and top each cookie with a pinch of flaky salt. Let them cool on the baking sheet for 10 minutes, then transfer to a cooling rack. Enjoy!!
These are actually the coolest! I was skeptical to try this recipe, but ended up making them TWIXE in a week. “These are the best cookies I’ve ever had,” was what my sister said (until I told her they had cheese LOL). It’s worth trying!
