
Making Cookies Inspired by TV Shows, Part 8: Grey’s Anatomy!
THIS COOKIE. Friends this cookie is one of my best ones yet. This cookie is based off of Izzie’s cupcakes. She cannot remember the secret ingredient for her chocolate cupcakes until a psychic patient tells her that it is coconut! So, these are chocolate cookies with coconut and toffee mixed in! The chocolate + coconut + toffee combination going on here makes this cookie taste like german chocolate cake! It is so yum. So, if you like german chocolate cake, or Grey’s Anatomy, or both, you need this recipe!

ingredients
- 1 1/4 cup butter
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1/2 cup cocoa powder
- 1 3/4 – 2 cups flour
- 1 tbsp cornstarch
- 1 tsp salt
- 1 tsp baking soda
- 1/2 tsp coconut extract
- 1 cup unsweetened shredded coconut
- 1 cup toffee bits
instructions
- Preheat the oven to 400 degrees. Combine the butter, brown sugar, and white sugar. Mix until creamy. Add the eggs and mix until combined.
- Add the cocoa powder, flour, cornstarch, salt, and baking soda. If you live at a high altitude, you will need the full 2 cups of flour. If you are at a low elevation, start with 1 3/4 cups. If the dough is sticky, gradually add more.
- Add the coconut extract, coconut, and toffee bits. Mix until everything is evenly dispersed. Using a 2 inch cookie scoop, scoop up to 6 dough balls onto a baking sheet. Bake them at 400 for 8-10 minutes, until the outside of the cookies has set. Enjoy!!
I have made this recipe a dozen or so times and they have been perfect every time. The coconut, toffee, and chocolate is a wonderful combination. I almost always have some of this dough frozen and ready for cookie related emergencies (a totally real thing). These cookies are simply put — delicious.
