
I have been on a lemon kick recently, and it is still in full swing with this lemon gnocchi! We’ve got a simple lemon butter sauce, with plenty of cheese and mascarpone to make it extra smooth. It’s finished off with lots of herbs, pine nuts and cheese. I think it’s the perfect summer dish and I’m so excited for you to try it!
ingredients needed for lemon gnocchi
- 1 16 oz package gnocchi
- 4 tbsp butter
- 2 tbsp lemon juice
- zest of one lemon
- 1/2 tsp garlic powder
- salt and pepper
- 1/2 cup parmesan cheese
- 1/4 cup mascarpone
- dill, basil, pine nuts for topping

lemon gnocchi
ingredients
- 1 16 oz package gnocchi
- 4 tbsp butter
- 2 tbsp lemon juice
- zest of one lemon
- 1/2 tsp garlic powder
- salt and pepper
- 1/2 cup parmesan cheese
- 1/4 cup mascarpone
- dill, basil, pine nuts for topping
instructions
- Bring a large pot of water to a boil. Add the gnocchi and cook according to package instructions (reserving some pasta water).
- Add the butter to a separate large pan over medium heat.
- When the butter has melted, add lemon zest, lemon juice, garlic powder, salt, and pepper. Stir to combine.
- Add the mascarpone cheese and parmesan. Stir until melted and combined.
- Add the gnocchi and stir until fully coated. If the sauce is getting too thick, add a splash of reserved pasta water and stir.
- Transfer the gnocchi to a bowl and top with basil, dill, pine nuts, and extra parmesan. Enjoy while hot!
