I love a healthy dinner bowl and this miso butter salmon bowl is my current favorite. Fluffy white rice, a crunchy cucumber edamame salad, and tender, flaky salmon cooked in a miso butter. The whole thing comes together in 20 minutes, but tastes incredible. It’s the perfect weeknight meal and I really think you’re going to love it.

why miso butter is the perfect pairing for salmon
Miso and salmon are a natural match, and when you add butter into the mix, it’s actually insane. Miso brings umami and gentle saltiness, while butter adds richness and helps the flavors mix seamlessly into the fish as it cooks.
The touch of brown sugar balances the saltiness of the miso, and grated garlic and green onions add just enough bite without overpowering the salmon. As the butter melts in the oven, it bastes the salmon, keeping it incredibly tender and flavorful with no extra work!
how to make miso butter salmon bowls
- Cook the rice according to package instructions and set aside.
- Preheat the oven to 375°F. Pat the salmon dry and place it on a lightly greased baking sheet.
- In a small bowl, combine the butter, miso paste, brown sugar, grated garlic, green onions, and a pinch of salt. Stir until smooth.
- Spoon the miso butter mixture over the salmon and use the back of a spoon to spread it evenly across the top.
- Transfer to the oven and bake for 8–12 minutes, depending on thickness, until the salmon is just cooked through and flakes easily.
- While the salmon cooks, make the salad. Add the cucumber, edamame, and cilantro to a bowl. Drizzle with sesame oil, rice vinegar, honey, sesame seeds, and salt. Stir to combine and adjust seasoning as needed.
- To serve, spoon rice into bowls, add the cucumber edamame salad, and top with the miso butter salmon.
how to store and enjoy leftovers
This meal stores beautifully, making it perfect for lunch the next day.
- Salmon: Store in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or enjoy cold over rice or greens.
- Rice: Store separately for up to 4 days. Sprinkle with a little water before reheating to keep it fluffy.
- Cucumber Edamame Salad: Best enjoyed within 1-2 days. The flavors continue to develop, but the cucumber will soften slightly over time.
