
Without a doubt, one of my favorite things about summer is fresh peaches. Peach season gives me new life and I always look forward to it, so imagine my excitement for this peach, avocado, and burrata salad! It is the perfect summer salad — fresh, vibrant, flavorful.
This is a no-lettuce salad which also just feels right for the summer. Plus it is all topped with a basil lemon dressing that is one of my favorite dressings ever. Recently I have been buying a lot of basil at the beginning of each week to make a big batch of this dressing to put on everything! It’s such a great, versatile dressing that pairs well with so many fresh summer flavors. So if you like the dressing too, make extra so you can put it on all your other salads and bowls!

- peaches
- avocado
- burrata cheese
- parmesan cheese
- lemon juice
- honey
- garlic
- salt
- pepper
- basil
- olive oil
how to make the basil lemon dressing
This dressing could not be easier. Just throw everything in a blender and blend until smooth! If you have extra dressing, keep it in the fridge. The dressing will set up a bit if you leave it in the fridge overnight, so to get it back to normal, just give it a quick stir or blend it again!
I seriously love this dressing on so many different things (obvi including this salad). It is perfect for any summer bowls or salads. If you want to make a big batch to have extra like I do, you’ll need quite a bit of basil. My favorite place to get basil when I need a lot of it is at Trader Joe’s! They have a big container for a couple dollars that works great.

peach, avocado, and burrata salad
ingredients
- 4-5 peaches
- 2 avocados
- 2 balls of burrata
basil lemon dressing
- 1/4 cup parmesan cheese
- 2 tbsp lemon juice
- 1 tbsp honey
- 1 tsp garlic
- 1/4 tsp salt
- black pepper to taste
- 1/2 cup fresh basil
- 1/2 cup olive oil
instructions
- Cut the avocados and peaches into slices.
- To make the dressing, add everything into a blender or food processor and blend until smooth.
- To plate, place the burrata on the plate or bowl and cut them down the middle. Gently pull either side of the burrata so it stretches out more on the plate.
- Top the burrata with the avocado and peaches, then generously drizzle with dressing. Enjoy!
