
Breakfast food is for sure my favorite, especially when these ricotta pancakes with coconut whipped cream are involved! The ricotta is the secret ingredient that makes these dreamy pancakes so soft and fluffy. And the coconut whipped cream just ties it all together!
These pancakes pair great with any fruit, but my favorite is passionfruit! It can be hard to find passionfruit, but if you can find it, use it! The tartness of it pairs so well with the whipped cream. But, any fruit will work!

- 1 tsp baking soda

- 1 cup ricotta cheese
- 3/4 cup milk
- 1 egg
- 1 tsp vanilla
how to make coconut whipped cream
Homemade whipped cream is a must for me when it comes to pancakes and waffles. It is superior to any store bought whipped cream and is well worth the extra 5 minutes. Since I added fresh passionfruit on top of my stack, I decided to make the whipped cream coconut flavored to add to the tropical feel! I did this by adding coconut milk to my whipping cream before whipping it up. The coconut milk whips up really well with the cream and adds a great coconut flavor.
If you don’t like coconut flavor, you can just leave out the coconut milk! Then you’d just have normal whipped cream, which will still work beautifully with these pancakes. Also, if you don’t want to make your own whipped cream, you can just use store-bought whipped cream. I definitely don’t think it’s as good, but sometimes it just is easier.

is ricotta necessary?
YES. Ricotta cheese is the star of these pancakes! It is what makes them light and fluffy. If you don’t have ricotta or don’t want to use it, you should just make a different recipe. The ricotta is necessary for these bad boys. However, there is leeway in what kind of ricotta you use. I’ve make this recipe with full-fat ricotta and with low-fat ricotta and it works great with both kinds. I think the full-fat kind has a fuller flavor (duh) but the low-fat works if that’s what you’ve got!

ricotta pancakes with coconut whipped cream
ingredients
ricotta pancakes
- 1 cup flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1 tsp baking soda
- pinch of salt
- 1 cup ricotta cheese
- 3/4 cup milk
- 1 egg
- 1 tsp vanilla
coconut whipped cream
- 1 cup heavy cream
- 1/2 cup coconut milk
- 1 tbsp maple syrup
- 1 tsp vanilla
topping
- 2 fresh passionfruit optional
instructions
- In a medium bowl, combine the flour, sugar, baking powder, baking soda, and salt. Stir together.
- In a separate bowl, combine the ricotta, milk, egg, and vanilla. Add the dry ingredients to the wet and stir until just combined.
- Add 1/3 cup of the batter to a greased frying pan. Cook until golden brown on both sides.
- To make the whipped cream, add the cream, coconut milk, maple syrup, and vanilla to a large bowl. Whip for 4-5 minutes until soft peaks form. Top on each pancake and add passionfruit (or your favorite fruit). Enjoy!
