Cherry tomato season is upon us so I will be making this roasted tomatoes and burrata all summer! This dish is really simple, but it is a perfect side dish or appetizer.
This dish is insanely easy to make. Toss cherry tomatoes with olive oil and spices, then roast until they are releasing their juices. Once they come out of the oven, add a ball of burrata and dive in!
I love serving this dish with bread. The bread soaks up the juices of the tomatoes and is the perfect way to transport these tomatoes and cheese to your mouth.
