- 1/2 cup rolled oats
- 1 cup chicken broth or bone broth
- 1/4 cup parmesan cheese
- 2 tbsp roasted red pepper
- 2 tbsp sun-dried tomatoes
- 2 tbsp chopped spinach
- lemon zest

savory oatmeal
ingredients
- 1/2 cup rolled oats
- 1 cup chicken broth or bone broth
- 2 tbsp parmesan cheese
- 2 tbsp roasted red pepper
- 2 tbsp sun-dried tomatoes
- 2 tbsp chopped spinach
- lemon zest

instructions
- Add rolled oats and chicken broth to a pot over medium heat. Stir to combine and let the mixture come to a boil. Stir occasionally and let the oats cook for 5-10 minutes, until most of the broth has cooked off.
- While the oats are cooking, cut the roasted red peppers, sun-dried tomatoes, and spinach into small pieces.
- When the oats are done cooking, add the parmesan, roasted red peppers, sun-dried tomatoes, and spinach. Stir until well combined and the parmesan cheese is melted. Add lemon zest to taste and stir.
- Transfer the oats to a bowl and top with dill, basil, lemon zest, flakey salt, and pepper. Enjoy!
