
For day 3 of my 12 Days of Thanksgiving Recipes we are making the perfect dinner rolls. Rolls are an essential part of a Thanksgiving dinner in my opinion, and these are the ideal ones. They are soft and so easy to make. Plus they can be made the night before if that is easier for your Thanksgiving schedule!

- 1 packet instant yeast
- 1 cup milk, warmed (around 100-110F)
- 8 tbsp butter, divided
- 3 tbsp honey
- 1 egg
- 3 1/2 cups all-purpose flour (420 grams)
- 1/2 tsp salt

- 1 packet instant yeast (2 1/4 tsp)
- 1 cup milk warmed (around 100-110F)
- 8 tbsp butter divided
- 3 tbsp honey
- 1 egg
- 3 1/2 cups all-purpose flour 420 grams
- 1/2 tsp salt
instructions
- Add the milk and yeast into the bowl of a stand mixer. Let it rest for 5 minutes.
- Soften 4 tbsp of butter and add it to the bowl along with the honey and egg. Mix until everything is combined.
- Add the flour and salt and mix with a dough hook for 5 minutes until the dough has formed and is starting to pull away from the side of the bowl. The dough should be very soft and slightly sticky. If it is really sticky, add a bit more flour.
- Cover the bowl with a cloth or plastic wrap and let it rise until doubled, about an hour. (Alternatively, you can transfer the bowl to the fridge and let the dough rise overnight, then continue the rest of the steps the next day)
- Dump the dough out onto a clean surface. Divide the dough in half and roll one half out into a square, about 12"x12". Use a knife or pizza cutter to cut the dough into 6 strips, each strip about 2" wide.
- Melt the remaining 4 tbsp of butter. Lightly brush each strip of dough with butter and roll it up. Transfer the rolls to a greased 9"x13" pan, with the seam side down. Repeat the process with the other half of the dough. You should have 12 rolls total.
- Cover the pan with a cloth or plastic wrap and let it rise for 30 minutes. While the dough is rising, preheat the oven to 350F.
- Once they've finished rising, transfer the rolls to the oven and bake for 25-30 minutes, until the tops are all golden brown. Enjoy!

Are these the correct measurements I followed it exactly and my dough was not nearly as pliable and doughy it was a pretty tough dough ball
hi! i’m sorry these didn’t turn out for you. i would make sure you aren’t over measuring your flour! i would recommend using a kitchen scale to make sure you don’t get too much flour in the dough — too much flour can lead to a tough dough.

hi! i’m so sorry you are running into this issue. are you using instant yeast? also, make sure your milk isn’t too hot! if it is over 110F it can scorch the yeast and it won’t rise. hope this helps! let me know if you have any other questions!

Question – the instructions in step 5 are not clear? Am I using only half the dough to make 12 rolls? What do I do with the other half?
hi! your question is answered in step 6! once you roll out one half, cut them, brush with butter, roll them up and transfer to a baking dish, you repeat the process with the remaining half of dough. i hope that clears things up!
Can I make this recipe without a stand mixer?
yes! just knead the dough by hand for 10 minutes!

Hi! I seen on TikTok there was a separate recipe for leaving the dough overnight. Is there any different steps? Or would I just put the dough in the fridge after rolling the doughs to use for the next day?
hi! yes, the instructions for making them overnight are on the recipe card. once you make the dough, cover the bowl and transfer to the fridge overnight. then the next day, continue with the rest of the instructions!
Hosting a large crowd of roll eaters for Thanksgiving. Is this okay to double or should I make two batches?
