
Welcome to the never boring salad club, today we are making the ultimate chicken caesar salad! Connor and I have been obsessed with this salad recently because it is so easy to make but is really filling. It is substantial enough to be a full dinner and is yummy enough that your significant other will be requesting it!
Okay so here are the details. We are making our own caesar dressing (that has no anchovies in it!), but you can certainly use store bought if you don’t have the time / prefer that. Then for the salad we use greens, cucumber, homemade croutons, parmesan cheese, cilantro, and chicken strips! You can use whatever kind of chicken strips you want! I like to use a spicy frozen kind that heats up in the oven, but use whatever you like best.

the ultimate chicken caesar salad
ingredients
caesar dressing
- 1/4 cup mayonnaise
- 1/4 cup greek yogurt
- 1/4 cup olive oil
- 1/4 cup parmesan cheese
- 1 tbsp lemon juice
- 1 tsp Worcestershire sauce
- 1 tsp dijon mustard
- 1 tsp garlic
- salt and pepper to taste

- 6 cups mixed greens
- 1 cucumber
- 2 slices bread
- 1 tbsp butter
- 1/2 lb chicken strips
- 3 tbsp caesar dressing
- 1/4 cup parmesan cheese
- 1/4 cup cilantro
instructions
- To make the dressing, add all the ingredients to a mason jar or food processor. Shake or blend the dressing until well combined.
- Toss the greens with 3 tbsp of the dressing (or more depending on preference). Separate the greens into two bowls. Chop the cucumber into small pieces.
- To make the croutons, heat a pan over medium heat. Spread butter on both sides of the bread and add to the pan. Cook on both sides until golden brown.
- Prepare the chicken strips according to package directions and cut into bite sized pieces.
- Top the mixed greens with cucumber, croutons, chicken strips, parmesan cheese, and cilantro. Enjoy!
