the ultimate chicken caesar salad

caesar dressing

  • 1/4 cup mayonnaise
  • 1/4 cup greek yogurt
  • 1/4 cup olive oil
  • 1/4 cup parmesan cheese
  • 1 tbsp lemon juice
  • 1 tsp Worcestershire sauce
  • 1 tsp dijon mustard
  • 1 tsp garlic
  • salt and pepper to taste

ultimate caesar salad

  • 6 cups mixed greens
  • 1 cucumber
  • 2 slices bread
  • 1 tbsp butter
  • 1/2 lb chicken strips
  • 3 tbsp caesar dressing
  • 1/4 cup parmesan cheese
  • 1/4 cup cilantro


  • To make the dressing, add all the ingredients to a mason jar or food processor. Shake or blend the dressing until well combined.
  • Toss the greens with 3 tbsp of the dressing (or more depending on preference). Separate the greens into two bowls. Chop the cucumber into small pieces.
  • To make the croutons, heat a pan over medium heat. Spread butter on both sides of the bread and add to the pan. Cook on both sides until golden brown.
  • Prepare the chicken strips according to package directions and cut into bite sized pieces.
  • Top the mixed greens with cucumber, croutons, chicken strips, parmesan cheese, and cilantro. Enjoy!
