To make the dressing, add all the ingredients to a mason jar or food processor. Shake or blend the dressing until well combined.
Toss the greens with 3 tbsp of the dressing (or more depending on preference). Separate the greens into two bowls. Chop the cucumber into small pieces.
To make the croutons, heat a pan over medium heat. Spread butter on both sides of the bread and add to the pan. Cook on both sides until golden brown.
Prepare the chicken strips according to package directions and cut into bite sized pieces.
Top the mixed greens with cucumber, croutons, chicken strips, parmesan cheese, and cilantro. Enjoy!
