
It is time for my 12 Days of Christmas Recipes! For day one we are starting strong with these peppermint oreo cookies. They are insanely thick, soft, and perfect for Christmas.
These cookies are insanely large. They’re practically the size of a baseball and who doesn’t love that! I feel like thick cookies have become a lot more popular in the last few years, and for good reason! They are so fun and these peppermint oreo cookies are no exception.

- 1/2 cup cold butter
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 egg
- 1 1/2 cups flour (195 grams)
- 2 tbsp cornstarch
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp baking soda
- 2 cups crushed peppermint oreos

There are a few tips to getting really thick cookies like these. The first is shaping. Once you make your dough and measure it out, you’ll want to shape it into a cylinder-like shape with a rough top. The easiest way to do this is start to shape the body of the dough ball into a cylinder. Then, slam the dough against your work surface to get a smooth bottom. Make sure you never mess with the top of the dough ball so it remains a rough look. This will help the cookie have a rough finish on top that remains thick!
The second tip is to refrigerate your dough. I know, no one likes to have to wait for their cookie dough to chill. BUT, if you want large, thick cookies, it is necessary! If you are feeling really impatient then you can just stick them in the freezer for 2 hours and call it good.

It seems like almost every year Oreo makes a version of their peppermint Oreos. One year it was peppermint Oreos, another year it was peppermint bark Oreos. I’m not sure what it will be this year, but most grocery stores will have them! My go-to for peppermint oreos is Trader Joe’s Peppermint Joe-Joe’s. They have them every year and they are so good. They work perfectly for these cookies and should be in all Trader Joe’s locations now!

peppermint oreo cookies
ingredients
- 1/2 cup butter, cold and cubed
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 egg
- 1 tsp vanilla
- 1 1/2 cups flour (195 grams)
- 2 tbsp cornstarch
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp baking soda
- 2 cups crushed peppermint oreos
instructions
- Add the butter, brown sugar, and sugar to the bowl of a stand mixer. Mix for 5-6 minutes, until totally incorporated and lighter in color.
- Add egg and vanilla and mix until combined. Add flour, cornstarch, baking powder, salt, and baking soda. Mix until just combined.
- Add crushed peppermint oreos and mix until just combined. Using a kitchen scale, weigh each dough ball out to 6oz (you can make them smaller if you want, just decrease the bake time accordingly!).
- Cover the dough balls and transfer to the fridge for at least 4 hours (or the freezer for 2 hours).
- Preheat the oven to 375 F. Transfer the dough balls to a lined baking sheet and bake for 12-15 minutes, until the cookies are barely starting to brown.
- Let the cookies cool completely and enjoy! If you want, top with a drizzle of white chocolate and crushed oreos.
