Welcome back to my cereal cookie series, next up are these cinnamon toast crunch cookies! It is a soft cinnamon cookie with white chocolate chips, rolled in blended cinnamon toast crunch, and topped with a cinnamon toast crunch streusel. So if you hate cinnamon toast crunch, you should probably leave now.
Wait I also forgot these cookies are topped with a smooth vanilla icing that just ties everything together! I will say these cookies are quite sweet. I mean, it’s a cookie made of sugary cereal, so what else can you expect. But although it’s sweet, it is good and so worth it.

cinnamon toast streusel
- 1/4 cup butter softened
- 1/4 cup brown sugar
- 1/2 cup cinnamon toast crunch
- 1/2 cup flour
- 1/2 tsp cinnamon
- pinch of salt
vanilla icing
- 1/2 cup powdered sugar
- 1 tbsp milk
- splash of vanilla extract
instructions
- Preheat the oven to 350F.
- Begin by making the cinnamon cookies. Add the softened butter, brown sugar, and white sugar to a bowl. Use a stand mixer or hand mixer to mix for 3-4 minutes, until well combined.
- Scrape down the sides and add the egg, egg yolk, and vanilla. Mix until well combined.
- Add the flour, cornstarch, cinnamon, baking soda, and salt. Mix on low until just combined. Add the white chocolate chips and pulse until well distributed.
- Set the dough aside and start on the streusel. For the streusel add the softened butter, brown sugar, cinnamon toast crunch, flour, cinnamon, and salt in a bowl. Use a stand mixer or hand mixer to mix until the streusel is well combined. The streusel should stick together when you squeeze it in your fist, but crumble when you run it through your fingers.
- Add 1/4 cup of cinnamon toast crunch to a blender. Blend until its fine crumbs. Pour the crumbs into a bowl.
- Use a large cookie scoop (about 1/4 cup) to scoop out the cinnamon dough. Roll the dough in your hands into a ball, then drop it into the bowl of cinnamon toast crunch crumbs. Roll the dough ball around in the crumbs until it is coated all over.
- Use a spoon or the back side of the cookie scoop to make an indent in the top of the dough ball. Add about 2 tbsp of streusel on top of the dough ball, in the indent. Repeat this process with the remaining dough.
- Add up to 6 dough balls on a parchment lined baking sheet then transfer to the oven. Bake for 8-9 minutes. Let the cookies cool on the baking sheet for 10 minutes, then transfer to a cooling rack to cool completely.
- While the cookies are cooling, make the icing. Add the powdered sugar, milk, and vanilla extract to a bowl. Whisk until smooth. When the cookies are cool, drizzle icing on top of each one and enjoy!

These are amazing !!! I made them for Christmas – I put them in the freezer in a sealed tight feeezer bag with no air – I tried them and they still taste amazing !!
Make these !
yay so glad you enjoyed these!!!
Thank you for this amazing recipe !! Very veryyyyyy delicious. I just had one problem… I added some cereals in the dough and they became really soft, which is not very enjoyable in the cookie. Do you know how I can avoid that ? ??
hi! there isn’t really a way to avoid that, which is why these cookies don’t have any cereal in the cookie part. the streusel stays crispy enough on top, but adding them in the dough just makes the cereal soft and stale :/
I’m confused. The recipe lists 1/4 cup of cereal in the cookie recipe portion, but not in the instructions. Am I missing something
its in step 6! you blend the 1/4 cup of cereal and then that’s what you roll each ball of dough in.
So delicious. Is it fine to freeze the dough?
yes, you can freeze the dough! the cereal might get slightly stale in the freezer, but other than that they will freeze just fine!
hi! what does the cornstarch do? i saw you have it in other cookie recipes too! does the cornstarch give a more cake-y or chewy texture? and can it be omitted?
makes the cookies soft! definitely not cakey or chewy. helps them be soft and stay soft.
i wouldn’t recommend omitting!
