
I have gotten so many requests to remake Crumbl’s cookies, so we are starting off with copycat Crumbl cornbread cookies! These cookies are just like the original and are so easy to make at home!
Crumbl is wonderful, but if you don’t live by a Crumbl, or you are craving a flavor they aren’t featuring that week, then you are out of luck! But not anymore! At least with the cornbread flavor. I’ve got you covered!
what is a cornbread cookie?
This cornbread cookie tastes exactly like it sounds. It tastes like the perfect combination of cornbread and a sugar cookie! Plus, this cookie is topped with a honey buttercream and a drizzle of honey, giving it the perfect cornbread vibes. Similar to cornbread, this cookie is quite dense, but each bite is soft and full of flavor.

- cornstarch

The cornmeal gives this cookie its distinct cornbread taste. It is essential! You can get cornmeal at any grocery store, and you will need it. The honey in the batter gives the cookie a slight honey taste, but it isn’t overwhelming with the toppings. The cornstarch makes these cookies soft and dense! I love adding cornstarch to my cookies, as you can see from my recipes like my brown butter raspberry white chocolate cookies or my Parks and Rec waffle cookies.

ingredients
cornbread cookies
- 1/2 cup butter
- 1/2 cup shortening
- 1 cup light brown sugar
- 1/2 cup white sugar
- 1/4 cup honey
- 2 eggs
- 1 tsp vanilla
- 2 3/4 cups flour
- 1 cup cornmeal
- 1 tbsp cornstarch
- 1 tsp salt
- 1 tsp baking powder
honey buttercream
- 1/2 cup butter
- 2 tbsp honey
- 2 cups powdered sugar
- 1 tsp vanilla
instructions
- Preheat the oven to 350. Combine butter, shortening, brown sugar, and white sugar in a large bowl or stand mixer. Mix for 3-4 minutes until well combined.
- Add eggs, honey, and vanilla. Mix again until combined.
- Add flour, cornmeal, cornstarch, salt, and baking powder. Mix until just combined. Dough should be quite thick and not too sticky.
- For large, Crumbl like cookies, scoop 1/2 cup of dough and roll into a ball. Place up to 6 dough balls on a baking sheet. Bake for 13-15 minutes. The cookies should look like they're not quite done, and should look slightly doughy. This is perfect! Take the cookies out of the oven and using a cup with a flat bottom, flatten the cookies into thick disks (instead of rounded balls).
- Let the cookies cool on the pan for 5 minutes, then transfer the cookies to a cooling rack and let cool completely.
- While the cookies are cooling, make the honey buttercream. Combine butter and honey in a bowl. Mix for 2-3 minutes until well combined. Add powdered sugar and vanilla, and mix again for 1-2 minutes until smooth.
- Add a scoop of the honey buttercream on top of each cookie. If you want, drizzle a little extra honey on top and dive in. Enjoy!

These cookies turned out great!! I’ve never had the ones from crumbl, so I can’t attest to their accuracy however these smack so just make them regardless. The only thing I did departed from the recipe was in my buttercream frosting I added cinnamon for that honey cinnamon butter from Texas Roadhouse vibe, which I highly recommend!!

I’m planning on making these today and I’m wondering what the shortening does to the cookie- can I make it all butter if I choose to or is the shortening important for something? Thanks!
Hi! I’m so excited for you to try these! Shortening is 100% fat, whereas butter is fat but also has milk and water in it. Shortening helps these cookies to be thick and soft. If you don’t have shortening or don’t have access to it, then you can just use all butter instead. But, if you can get shortening, I highly recommend using it!

Haven’t made these yet, but i’m curious, you flatten them AFTER baking? I’ve never flattened after baking, curious as to why it wouldn’t be done before.
You can flatten the cookies slightly before baking if you would like! It won’t make a huge difference if you do it before or after baking.

Hey! Unfortunately a corn meal mix won’t work because it is not just cornmeal. Cornmeal mix usually has flour and some combination of baking soda and salt. Since it is not just cornmeal, the mix won’t work!
These were fantastic flavor wise! My only thing was the cornmeal I got was too big so it left hard pieces in the cookies. I need a find a fine grind and these would be perfect!!

I loved this recipe! The only complaint I have is that I had so much honey buttercream left over. I used less that half and put a heaping tablespoon on each cookie. The dough itself made exactly 10 large cookies and were better than the crumbl version

Did you try making and refrigerating dough by chance? Curious it they would bake the same if doing so.
i haven’t tried refrigerating the dough first! it definitely won’t hurt the dough.
Does the butter need to be softened?
you can soften it slightly! don’t melt it, though.

I’ve not had the “real deal” from Crumbl but these are delicious…who needs Crumbl when we have you so generously sharing your recipes, thank you! They turned out perfect. I may try a previous suggestion of adding a little cinnamon to the frosting next time I make them but they are pretty perfect just the way they are! (I did make them bit smaller and they do freeze nicely)

Now I must be honest being celiac, I have not been able to taste the ones from Crumbl, I can’t compare but I can tell you this recipe is amazing! I used “Cup4Cup” gluten free flour and gluten free cornmeal ( Bob’s) but followed everything else to a “T.” I baked them for 12 mins and they were perfect. Don’t be afraid to take a recipe and make it gluten free! Thank you for a great recipe.

It’s official. This is the best Crumbl cornbread copycat I have tried.
This recipe was genuinely so amazing! The cookies came out perfect sized and not to flat and not too small. They were so chewy and had the perfect texture with the gooey insides and crispy edges. The honey was phenomenol.
