Often I will go to a restaurant and try a dish, and leave convinced I need to recreate it at home. That’s what happened with this dish a few weeks ago! We ordered the “miso cacio e pepe” and everyone at my table was obsessed with it. I made it the next day for lunch and have been obsessed with it ever since.
If you’ve never had cacio e pepe, it’s a simple pasta dish with lots of parmesan and lots of black pepper. We are keeping those two essential elements and adding a scoop of miso paste. The dish is still simple and now has an added boost of flavor.

miso cacio e pepe
ingredients
- 1 tbsp butter
- 1 tbsp miso paste
- 1 packet ramen noodles
- 2 tbsp parmesan
- 1/2 tsp black pepper
instructions
- Fill a pot with water and set it over high heat to boil. Add the ramen noodles and cook according to package instructions. Save at least 1/4 cup of the pasta water!
- Add the butter to a pan over medium heat. When the butter melts, add the miso paste and stir until a thick paste has formed. Add a splash of pasta water and stir until a smooth sauce is achieved.
- Transfer the hot ramen noodles into the pan. Add parmesan and black pepper and toss until well combined. If needed, add another splash of pasta water to help everything come together so you have silky smooth noodles.
- Transfer to a bowl and top with more parmesan and pepper. Enjoy while it's hot!
