
This single-serve s’more cookie is the perfect little dessert. If you’ve never seen the s’more cookie trend, you start with a graham cracker, then top it with chocolate chips, a marshmallow, and cookie dough. Bake until the cookie dough is cooked and that’s it! This is a single serve version, it makes one beautiful, giant cookie.
ingredients needed for this single-serve s’more cookie
- 2 tbsp butter
- 2 tbsp brown sugar
- 1 tbsp white sugar
- 1 tbsp yogurt
- splash of vanilla
- 1/4 cup + 1 tbsp flour (about 45 grams)
- 1/4 tsp baking soda
- pinch of salt
- 3 tbsp chocolate chips, divided
- 1 graham cracker
- 1 marshmallow

ingredients
- 2 tbsp butter softened
- 2 tbsp brown sugar
- 1 tbsp sugar
- 1 tbsp plain yogurt
- splash of vanilla
- 1/4 cup + 1 tbsp flour around 45 grams
- 1/4 tsp baking soda
- pinch of salt
- 3 tbsp chocolate chips divided
- 1 graham cracker
- 1 marshmallow
instructions
- Preheat the oven to 350F. Add butter, brown sugar, and sugar to a bowl. Whisk until well combined.
- Add yogurt and vanilla and mix again.
- Add flour, baking soda, and salt. Mix until just combined.
- Add 2 tbsp of chocolate chips and stir to combined.
- Place a graham cracker down on a lined baking sheet. Add remaining chocolate chips, and a marshmallow.
- Shape all the cookie dough into a disk and shape it over the marshmallow. Transfer to the freezer for 10 minutes, then bake for 10-12 minutes.
- Top with flaky salt and enjoy!
