spring brown butter gnocchi
ingredients
- 8 oz gnocchi
- 2 tbsp butter
- 1 tsp olive oil
- 1 tsp garlic
- 1 cup asparagus chopped
- 1/2 cup frozen peas
- black pepper
- 1/4 cup parmesan
instructions
- Bring a large pot of water to a bowl. In a saucepan, combine olive oil, garlic, asparagus, and frozen peas. Cook for 7-10 minutes until asparagus is mostly cooked, but still crunchy. Transfer everything in the pan to another bowl.
- When the water is boiling, add gnocchi and cook according to package directions. Then drain.
- Add butter to saucepan (that you cooked the asparagus, etc in). Let the butter cook for a couple minutes, stirring constantly, until the butter begins to brown. When the butter is brown, add cooked gnocchi and stir.
- Add back the asparagus mixture and stir. Transfer to a bowl and top with black pepper and parmesan cheese. Enjoy!
Hi there! Should we be using salted or unsalted butter?
Also, would you recommend olive oil or ghee as the tastier/better dairy-free substitute? Some members of my family have gluten and dairy substitutes.
Thank you!
hi! i usually use salted butter, but either will do! and i would use olive oil for a dairy-free substitute!
